There are a great many recipes for cooking cutlets. They can be made from almost any meat, fish, vegetables. Chicken cutlets are a fairly popular dish, you can find it both in the restaurant and in the school cafeteria. If you want to fry such cutlets at home, make sure to serve them with a delicious sauce, then this dish will not seem so trivial to your homemade ones and will arouse great interest.

Step 1
Cut the crusts off the loaf. Soak the soft part in a small amount of milk (0.5 cups will be enough), and then squeeze.

Prepare the minced meat. If you prefer to make it yourself, buy a chicken fillet for this purpose. Grind it twice. Add bread, egg, salt and spices. Blind small patties.
Step 3
You don't need breadcrumbs for this recipe. Preheat a frying pan, melt some animal fat in it and place the cutlets. Fry them until lightly golden brown. Turn the patties over and fry the other side. Usually it takes 2, 5-3 minutes on each side. It is better to take a frying pan large enough so that you can put all the cutlets in one layer.

Use 1 glass of milk for the sauce. Add flour and spices to it. If you are preparing such cutlets for a small child, it is better to do without spices - the sauce should not be too spicy. Pour the sauce over the cutlets, cover the skillet with a lid and simmer for ten minutes.
Step 5
For the second recipe, calculate the amount of wheat bread. The weight of the crusty bread should be about ¼ of the weight of the meat. By cutting off the crusts, you get the optimum weight ratio. Soak the bread in milk and squeeze.
Step 6
Pass the meat together with the skin through a meat grinder. Add bread, pepper and salt to the resulting minced meat. Stir the ingredients and roll the minced meat again.
Step 7
Blind the patties. Make them narrow and long. In the middle, make grooves for the sauce and cheese. Grease a baking sheet with the inner fat and place the patties on top of it.
Step 8
Prepare the sauce. It should be thick enough. Heat a small skillet, melt a lump of butter in it, and brown the flour. It should turn slightly yellowish. Heat the milk to a boil. Pour in flour, mix well and bring to a boil over low heat. Boil the sauce for 5 minutes, then add sugar, salt, stir and strain. Add a small piece of butter and put on low heat again. Get the thickness you want.
Step 9
Spoon the sauce into the grooves you made on the cutlets. Sprinkle with grated cheese on top. Preheat the oven to 180 ° C and bake the patties at this temperature for 20-25 minutes.
