Take two bunches of white asparagus (about 22-24 pieces), peel the undersides of the stems with a potato peeler and rinse them under cold water. Fill a large saucepan with water, transfer the asparagus stalks to it, and heat. If the purchased or harvested asparagus is already slightly wilted, add one tablespoon of sugar and the same amount of lemon juice to the water. Cook the white asparagus for 10-15 minutes. Check the readiness with a knife: if you can easily cut the stem, the asparagus is already cooked.

Prepare the sauce. To do this, melt 30 grams of butter in a small saucepan (preferably a non-stick saucepan). After that, add 40 grams of flour there and mix everything thoroughly so that no lumps form. Add to flour and butter half a liter of milk 2.5% fat and grated small nutmeg, do not forget to stir constantly. Season with salt and pepper to taste. When the sauce thickens after boiling, remove the saucepan from the heat and stir its contents with 120 grams of grated Emmental cheese. The sauce is ready.

Step 3

Wrap two or three shoots of boiled white asparagus in thin slices of smoked salmon or uncooked smoked ham (if finances permit, purchase Parma) two or three shoots of boiled white asparagus, all you need is 7-9 slices. Put everything on a fireproof dish or dish, top with the sauce you prepared earlier and place in the oven to bake. The temperature in the oven should be about 200-220 degrees, but if the stove has cooking modes, select "grill". When the sauce has a golden crust, the dish is done. Serve white asparagus with salmon on slightly warmed plates along with boiled young potatoes; white Muscat wine is ideal as an alcoholic beverage.
