First, the carcass of the fish must be cleaned of scales, but since the scales are small enough and deeply planted, you will have to try to clean it off properly. It is removed with a stocking, starting from the head, around which the incision is made, and ending with the tail. Remember that you need to not only properly wash, but also gut the fish. The insides must be removed so as not to damage the gallbladder, otherwise the meat may become bitter. It is necessary to remove the gills from the head, but the head itself does not need to be cut off, since the finished burbot will look impressive with it.

After the fish is cleaned and gutted, it is necessary to remove excess moisture from the surface of the fish by blotting it with a napkin. Then you need to mix fine salt with ground black pepper and rub the fish inside and out with this mixture. Then let the fish stand for 30 minutes so that it absorbs the salt.
