It is necessary
- Serves 4:
- - 400 g of pumpkin pulp;
- - 1 teaspoon of ground coriander (to taste);
- - 2 teaspoons of fennel seeds (to taste);
- - a pinch of ground pepper;
- - 8 tablespoons of olive oil;
- - 300 g of white canned beans;
- - 1/2 bunch of cilantro (to taste);
- - 1 red onion;
- - juice and zest of 1 orange;
- - 1/2 teaspoon honey;
- - salt;
- - ground black pepper.
Instructions
Step 1
Cut the pumpkin into slices, sprinkle with spices, pour 3 tablespoons of olive oil, mix, put on a baking sheet and bake in the oven for 30 minutes at 200 degrees Celsius.
Step 2
For dressing, mix 3 tablespoons of oil with honey, juice and orange peel. Season. Peel the onion, cut into slices, mix with the beans, pumpkin, cilantro (to taste) and drizzle with the dressing.
