Blueberries are very useful for vision, and in general this berry is considered a real storehouse of vitamins. This healthy berry can be used to make a delicious cold soup. Blueberry soup is perfect for a kid's breakfast or a light lunch.
It is necessary
- For ten servings:
- - 2 liters of water;
- - 3.5 cups blueberries;
- - 1 cup of sugar;
- - 3 cups of whipped cream;
- - 3 tbsp. tablespoons of lemon zest;
- - 4 teaspoons of potato flour;
- - 1 tbsp. a spoonful of cornstarch;
- - a pinch of salt.
Instructions
Step 1
Take a large saucepan, it should have a thick bottom. Mix fresh blueberries and sugar in it, add chopped lemon zest, pour two liters of water. Put on moderate heat.
Step 2
Bring to a boil, stirring occasionally. The sugar must dissolve completely. The berries should become softer.
Step 3
Separately mix cornstarch, potato flour with two tablespoons of cold water, and add a pinch of salt. Add a little sweet liquid from the pan to the same mixture, stir.
Step 4
Pour the starch mixture into a saucepan with blueberries, cook until the soup is thick, stirring constantly. Remove from heat, refrigerate at room temperature.
Step 5
Serve ready-made blueberry soup cold in bowls with whipped cream.
