Step 1
They know how to cook rice deliciously in China and India, but in our traditional cuisine it can turn out just as well. The first step is to choose the right cereal, basmati rice is the tastiest. It has spicy, thin and long grains. This type of rice turns out to be more aromatic and beautiful, but it also costs more than usual. So if there is a lack of finances, simple grains will do.
Step 2
Once the right rice has been selected, you need to prepare a suitable cooking utensil. You can cook rice deliciously if you cook it in a thin and wide layer. So the most suitable dish is a frying pan with a diameter of 25.5 with a lid. If there is no lid for such a frying pan, you can adapt the lid from a large saucepan.
Then you need to cut and fry the onion - in vegetable oil, until golden brown. After all, if you cook rice with onions, it will be much tastier. If you don't like onions, you can boil the rice without it. It will still be delicious.
Put rice on the bottom of the fried onion or just in a frying pan with vegetable oil. There is an opinion that it is not necessary to rinse it before cooking, otherwise useful substances will go away. And at a high temperature, the cereals will still become clean. Rice must be gently mixed right in the pan so that all the grains are covered with oil. Then it will turn out to be crumbly. Then you should add hot water to the pan, preferably boiled.
Step 3
You can also cook rice deliciously in chicken broth. The liquid should be twice as much as the cereal. That is, if rice, for example, is 150 ml, then there should be 300 ml of water or broth (it is necessary to measure rice in ml, and not in grams). You also need to salt the rice - for every 150 ml there is about 1 teaspoon of salt.
Then you need to mix everything very carefully and close the lid, reducing the heat to a minimum. Stir the rice only once, in no case more. Excessive stirring leads to the release of starch from the cereal. Rice, which gets in the way a lot, turns out to be sticky and then sticks together. Rice is boiled for 15 minutes. You can check the readiness by tasting the grain. You can also gently tilt the lid of the pan: if moisture accumulates on the edge, the rice is not ready yet. When the rice is ready, remove the lid and cover the pan with a towel for 5-10 minutes. Excess moisture will gradually be absorbed into it. The rice is ready and can be served by loosening it slightly with a fork.
Step 4
Delicious rice can be cooked using the rooster. These dishes have thick walls, and this is the main factor in the easy preparation of delicious pilaf or rice garnish. Moreover, you do not need to make any special efforts, it is enough to rinse the rice, take one and a half glasses of water to a glass of cereal and put it in a duckhouse, at the bottom of which a mixture of vegetable and butter is already poured - it will turn out to be tastier. The thicker the walls of the rooster, the more chances you have of getting a very tasty dish. The fact is that such rice is cooked over very low heat, and the heat from the fire is evenly distributed along the walls. Thus, the rice also warms up very evenly, it will not burn, it will turn out to be crumbly and, moreover, fragrant.
Step 5
There is another way of cooking rice, which will allow you to get the "right" dish without much hassle. Of course, this is cooking in a cauldron. And not only on an open fire or stove, but also in the oven. The latter method will be preferable, because the cauldron will warm up not only from below, but from all sides. As a result, the rice will languish. It's a good idea to cook pilaf this way. Lamb or pork meat, aromatic barberry and cumin, carrot cut into strips and whole garlic cloves added to rice will create a very, very appetizing combination. And rice, while languishing in the oven, is saturated with fat from the meat.
Step 6
It is very important that delicious rice is healthy as well. To make it this way, you need to know one important fact: the less the cereal is subjected to heat treatment, the more valuable substances remain in it. Combining two factors - taste and benefit - will turn out when cooking rice in ceramic dishes with thick walls and a lid that closes tightly. It is necessary to heat a spoonful of olive oil in a ceramic frying pan, add the same amount of butter if desired, and then pour the rice washed in the Chinese tradition seven times into the pan. Then mix very quickly, thus evenly distributing the oil over the grits, and only then pour water. The proportion is approximately 1: 2, that is, two glasses of water are needed for a glass of cereal. But you can take one and a half. Cook the rice over a very low heat and under a tightly closed lid until cooked.
