The end of the berry season does not mean that you will no longer be able to enjoy homemade sweet pies. Make baked goods with frozen berries: raspberries, cherries, blueberries, strawberries. You can bake a classic open tart made from yeast dough or make a delicious fluffy sponge cake with juicy berries.

Strawberry Sour Cream Pie

This cake is usually prepared with fresh berries. But frozen ones are no worse, with them the product turns out to be no less lush and juicy.

You will need:

- 15 g of yeast;

- 1 glass of milk;

- 2 eggs;

- 2 tbsp. tablespoons of vegetable oil;

- 4 tbsp. tablespoons of sugar;

- 0.25 teaspoons of salt;

- 3 cups wheat flour.

For filling:

- 400 g of fresh frozen strawberries;

- 1 tablespoon of starch;

- 1 glass of sour cream;

- 1 cup of sugar;

- 1 egg for lubrication.

Sift flour. In a large bowl, combine eggs with sugar and salt, add warm milk, butter and dry yeast. Pour flour in portions and knead the dough. Put it in a warm place for 2 hours. When the dough rises with a fluffy cap, wrap a spoon over it and let rise again. Put the strawberries out of the bag and let them thaw.

Knead the dough a little on a floured board. Cut off the fourth part, roll the rest into a rectangular layer. Place the dough on a greased baking sheet. Make sides around the edges, sprinkle the surface of the layer with starch. Spread the strawberries in an even layer. Roll the remaining dough into a thin cake, cut it into strips and place them on the berries in the form of a lattice. Let the pie sit for 15 minutes.

Beat the egg, brush over the wire rack and sides. Place the baking sheet in an oven preheated to 200 ° C. Bake the cake until tender, then remove from the baking sheet and cool on the board. Whip sour cream with sugar and pour this mixture over the pie.

Airy strawberry pie

This pie turns out to be very tender and fluffy, and the sour strawberry contrasts well with the delicious sugar crust.

You will need:

- 1, 5 glasses of wheat flour;

- 250 g frozen strawberries;

- 170 ml of milk;

- 1 egg;

- 6 tbsp. tablespoons of butter;

- 0.25 teaspoons of salt;

- 1 teaspoon of vanilla sugar;

- 1, 5 tsp baking powder;

- 1 tbsp. a spoonful of starch;

- 1, 5 glasses of sugar;

- 1 lemon.

Melt the butter, add 1 cup sugar, juice squeezed from half a lemon, and thinly grated zest. Beat everything, put the egg in the mixture, pour in the milk and beat again. To make the dough fluffy and uniform, the easiest way is to use a mixer. Sift the flour, mix with vanilla sugar and baking powder, add portions to the butter-milk mixture, mix the dough well with a spoon.

Defrost the strawberries a little and mix with the starch. Grease the mold with butter, put the dough into it. Spread the strawberries over the surface of the pie, dipping them slightly into the dough. Sprinkle everything with the remaining sugar and place the product in an oven preheated to 180 ° C. Cool the pie right in the tin, cut into pieces and place on a serving platter.
