Instructions
Step 1
You can bake salmon in the oven in a variety of ways: whole, steaks, small pieces, in foil, just on a baking sheet, etc. With the right technology, in any case, it will turn out tasty and tender, and it will also retain useful substances. The only rule is not to overexpose it in the oven, otherwise the meat may become dryish. If you cook it in the form of steaks, 20 minutes is enough at a temperature of 180 to 200 ° C, but the baking time of a whole fish depends on its size and can vary from 50 to 80 minutes. It is still better to cut large salmon into pieces - then they will surely be cooked and soaked in marinade.
Step 2
Rinse the fish in cold water. Cut the steaks from the salmon, trying to hit with a knife blade between the vertebrae of its spine. The thickness of the piece should not be less than 2 cm. Finely chop the onion, chop the dill, lightly add salt and stir. Squeeze the onion with your hands to soften it and release the juice. Cut the remaining lemon half into slices thinly. Preheat oven to 200C. Wrap each piece in foil, sprinkle with the onion and dill mixture and place the lemon slices on top. Try to wrap the edges of the foil sheets tighter. Place the salmon on a baking sheet and place in a preheated oven for 20 minutes. Turn off the oven and after five minutes, remove the fish, remove it from the foil and carefully transfer it to plates.
Step 3
To bake whole salmon, choose a small carcass. If necessary, clean it, gut and remove the gills, then rinse thoroughly under running water and pat dry with a cloth. Rub the inside and outside of the carcass with salt, black pepper and other favorite spices and herbs. Of the latter, rosemary, thyme, fennel are best suited to salmon, you can combine with this fish and ginger, but there should not be too much of it. Make deep cross cuts on one side of the fish and insert lemon circles into them - this will not only improve the taste of the finished dish, but also make the fish look more attractive.
Step 4
While the salmon is marinating, cut the onions and tomatoes into thin slices, lay them in layers in the belly of the fish, also adding a couple of sprigs of rosemary or lemon balm for flavor. After 20 minutes, transfer the carcass to a baking sheet covered with foil, squeeze the juice of half a lemon onto the salmon, wrap the foil and bake in an oven preheated to 200 ° C for about 35 minutes. Then open the foil to brown the fish and cook for another 10 minutes. Put the finished salmon on a dish, decorated with lettuce leaves, and serve with lemon wedges.
Step 5
This fish is no less tasty in cream. For cooking, it is better to use steaks - pepper and salt them to taste, sprinkle with lemon juice and fry on high heat for a few minutes on each side, so that the crust just grabs. You can use a little olive oil for this. While the fish is cooking, in a saucepan in butter, sauté the chopped leeks a little, add a tablespoon of flour, and after a couple of minutes - a glass of cream. Simmer for 5 minutes, stirring constantly. If the sauce is thick, dilute with a little hot water. Fold the salmon into a fireproof dish with high enough sides, pour the sauce and put in an oven preheated to 180 ° C for 15 minutes. Sprinkle the finished dish with fresh dill and serve with boiled rice or potatoes.
Step 6
In order not to worry about the side dish and at the same time get a healthy dish, bake pieces of salmon along with tender asparagus - a light and delicious dinner will come out. First marinate the fish in salt, spices and dry white wine - a couple of tablespoons are enough for one steak. Soak the salmon in the marinade for about 15 minutes. In the meantime, wash the green asparagus, cut off the rougher ends, and place the rest on foil sheets and drizzle with olive oil. When the fish is cooked, place the slices on top of the asparagus, drizzle with lemon juice and carefully wrap the foil so that the juice formed during cooking does not leak out. Bake the salmon at 200 ° C for 25 minutes. Serve with lemon and white wine.
Step 7
Salmon can also be cooked in an Asian manner. To do this, grind a couple of garlic cloves passed through a press in a mortar, a small bunch of cilantro, a sprig of lemongrass, 2 cm of ginger root and a chili pepper. Rub the fish with this mixture, add a little salt, put in a deep bowl and pour 150 ml of soy sauce. After 20 minutes, remove, transfer to a fireproof dish, pour with sauce of olive oil and honey mixed in equal parts. Place the oven on the grill and cook the salmon for about 20 minutes.
Step 8
Use pita bread instead of foil - salmon will turn out to be no less juicy, and pita bread will be crispy and soaked in juice. When the fish is marinated, put it on pita bread, greased with vegetable oil, add any vegetables to taste: tomatoes, carrots, onions, bell peppers. Then carefully wrap the pita bread, transfer it to a baking sheet, which is also greased with butter, and bake in the usual way. Lavash can also be greased with a little sour cream on top.
Step 9
Bake salmon fillets in pots. Fry the onions and carrots in butter, put them in pots, add the sliced potatoes to them, salt, pepper and pour in a little water. Cover with lids and place in an oven preheated to 180 ° C for 20 minutes. Meanwhile, cut the salmon fillet into small pieces, pepper, salt and drizzle with lemon juice. Add to the pots, pour in 100 ml milk each, again send to the oven for 20 minutes. Serve the finished dish directly in the pots, garnish with dill.
