“The hut is not red with its corners, but red with pies,” says a Russian proverb. For a long time in Russia, with fervor, with heat, pies and pies were a decoration of the table. Cooking pies is a troublesome task, but you can make it as easy as possible by kneading the dough with kefir. It is suitable for both fried pies and oven baked ones. It will take very little time to prepare the dough on kefir, and you can use the most varied filling: with meat, liver, cabbage, potatoes, mushrooms, jam, jam and apples.

It is necessary

    • For the test:
    • a glass of kefir;
    • 0.5 teaspoon of baking soda;
    • 0.5 teaspoon salt;
    • 1 tablespoon sugar
    • 4 tablespoons of vegetable oil (better than mustard oil);
    • flour (about 500 g).
    • For potato filling:
    • 500 g potatoes;
    • onion;
    • butter;
    • vegetable oil;
    • salt.
    • For apple filling:
    • 500 g apples;
    • butter;
    • 4-6 tablespoons of sugar;
    • a teaspoon of rum.

Instructions

Step 1

Pour kefir into a bowl, add soda, salt, sugar and vegetable oil. Mix everything thoroughly until a homogeneous mass is obtained.

Step 2

In the resulting mixture, begin to gradually add flour, stirring everything well. Add flour by eye until the dough reaches the consistency needed for the pies. It should be soft, not sticky or tight.

Step 3

Cover the dough with a towel or napkin and let stand for about thirty minutes.

Step 4

Form small balls from the finished dough. On a table or a special board, sprinkled with flour, roll each bun into a small round cake.

Step 5

Place the filling in the middle of each tortilla and pinch the edges of the dough, giving the patties a flat, semicircular, spherical or triangular shape.

Step 6

Put the cut pies on a floured sheet and let stand for 10-15 minutes.

Step 7

Pour vegetable oil into the pan and heat it well.

Step 8

Sweep off excess flour from the pies, as it will burn when frying, and the pies will turn out to be dark in color. Put the pies in the pan with the seam side down and fry for 5-7 minutes over medium heat. Then turn over to the other side and fry for another 5 minutes so that they are browned on both sides.

Step 9

For potato filling, wash and peel the potatoes well. Wash again and put in boiling water and cook until tender.

Step 10

Peel and finely chop the onions. Pour vegetable oil into a frying pan and fry the onion until golden brown.

Step 11

Drain the broth from the boiled potatoes, but do not pour it out. Without letting the potatoes cool, mash them well with a wooden pestle until smooth. Make sure there are no lumps. Then add salt, oil and sautéed onions. Mix everything thoroughly and beat the potato mass with a spoon. The filling should be fluffy, if it turns out to be very steep, pour in a little potato broth or hot milk and beat again. Cool the filling.

For the apple filling, wash the apples and cut into wedges. Then add granulated sugar and rum to them. Mix everything.

Step 13

Melt the butter in a skillet. Put apples in it and simmer slightly, not cooking. You can add cinnamon. Cool the filling.

Step 14

You can make pies with fresh apples. For this filling, wash and cut the apples into wedges. Sprinkle them with sugar and sprinkle with rum (cognac or vodka). Let it stand for an hour and a half, when the apple slices become softer, you can use them in the filling.
