After pre-fermentation, add brine to the barrel and fill with a wooden stopper with a linen pad. Store watermelons in a cellar, glacier, or basement. After a couple of weeks, the watermelons will be ready for consumption.

If you want the watermelons to be sweet and sour, then you should use the following salting method. When placing watermelons in barrels, sand them with clean sand (it helps to preserve the shape of the fruit). Then prepare the brine. For every ten liters of water, add 800 grams of table salt and 400 grams of granulated sugar. It is not necessary to add spices and spices to watermelons. Pour the prepared brine over the watermelons poured in a barrel so that it covers the fruits. Lay a clean cloth on top, a wooden circle and put oppression on top. After two months, you need to move the barrel to a cold storage place. Within a month, the watermelons will be ready for consumption.
