The times of food shortages are a thing of the past, and now you can buy any baked goods in stores. Still, homemade pies, buns, rolls and cheesecakes will always be a success. Baking beautiful and ruddy cakes is a great art and needs to be learned.
It is necessary
-
- 250 g sour cream;
- 2 glasses of milk;
- 2 tbsp Sahara;
- 1/2 tsp salt;
- 2-3 eggs;
- 1 bag of dry yeast;
- half a glass of oil;
- 5-6 cups flour.
Instructions
Step 1
The basis of a good cake is the right dough. To prepare yeast dough, take an enamel dish, pour milk or water warmed up to 30-35 degrees into it, dilute the yeast, dissolve sugar, salt, add sour cream, eggs. Then add the pre-sifted flour and knead the dough.
Step 2
Add melted butter (butter, ghee, vegetable or margarine) before you finish mixing. Knead the dough until it comes off the sides of the dish and hands.
Step 3
Lightly flour the dough and cover with a clean, dry towel. Place the dishes with the dough in a warm place for fermentation for 2-3 hours. To remove the generated carbon dioxide and saturate the dough with oxygen, knead it when it rises and increases in volume by about 2 times. Then wait for the dough to rise again and knead and knead again.
Step 4
Dust the table with flour and lay out the dough. It should be firm, soft, elastic and not stick to your hands. Divide it into 2 unequal pieces and leave a small piece for decoration. Roll out most of the dough into a 1 cm thick layer and leave to proof for 10 minutes. At this time, prepare the decorations: thinly roll the set aside and cut flowers, petals, twigs, names and other figures out of it.
Step 5
Screw the rolled dough onto a rolling pin and transfer it to a baking sheet, level the edges with a knife. Lay out the filling, there can be many options: minced meat with onions, stewed cabbage with chopped eggs, liver with buckwheat porridge, fish with sago, mushrooms, green onions with eggs, etc. Then roll out a smaller piece of dough, place it over the filling and gently pinch the edges, bending the seam down.
Step 6
In the center of the cake, make a small hole for the steam to escape. You can also chop the dough in several places with a fork or make nice curly cuts. Brush the top with yolk or a mixture of yolk and milk and lay out the composition of the figures cut from the dough. The cake needs to be spaced, so cover it with a clean towel and let it sit in a warm place for 15-20 minutes.
Step 7
To get a nice and ruddy cake, grease it again with a mixture of yolk and milk before baking. Alternatively, you can use separately the yolk and milk, sweet or salted water, oil.
