Basic rules for cooking chicken kebabs

For cooking chicken kebabs, meat from poultry thighs is ideal. It is fatty enough to be juicy after cooking over an open fire, and yet it can be cut into very large chunks. Chicken breast is also often used for barbecue, and many prefer them as more dietary meat, but it is easy to dry out. Therefore, if you make kebabs from chicken breasts, you should first marinate the meat well, generously adding vegetable oil to the marinade.

You can choose different combinations of ingredients for the marinade. As an acid, take vinegar or sour lemon juice, soy sauce, fermented milk products, various spices and herbs are added to them. The most popular combinations are olive oil, lemon juice and garlic with herbs, a mixture of soy sauce with sesame oil and honey, kefir or thick yogurt with chopped dill.

Small bamboo skewers are suitable for making chicken skewers. Half an hour before you get meat on them, you need to soak them in cold water. Otherwise, they can flare up from the heat of an open fire and ruin the whole dish.

You don't need to string the meat either too loosely or too tightly. If the pieces are too far apart, they may ooze and burn. If strung too tightly, they can remain soggy where one piece touches the other.

- 8 skinless chicken breasts;

- 3 tablespoons of soy sauce;

- 3 tablespoons of brown sugar;

- 2 tablespoons of sesame oil;

- ¼ teaspoon of ground ginger;

- 4 cloves of garlic;

- 400 grams of canned pineapple slices.

Pass the garlic through the garlic press. In a bowl, combine soy sauce, sesame oil, ginger and garlic, add ground ginger and sugar. Cut the chicken breasts into cubes with a side of 2-3 centimeters, put them together with the pineapple pieces in the marinade. Marinate Greek style chicken. Take:

- 750 grams of chicken breasts;

- 200 ml of thick Greek yogurt without additives;

- 2 cloves of garlic;

- ½ teaspoon of ground cumin;

- salt and freshly ground black pepper.

Combine yogurt, salt, pepper and cumin in a bowl. Chop the garlic finely and add to the marinade. Add the diced chicken and stir well until the marinade is on the meat. Marinate for 30-40 minutes. String on pre-moistened skewers and grill over coals or grill for 10-12 minutes, remembering to turn the skewers with kebabs.
