- • chicken - 4 breasts;
- • ghee butter - 2 tbsp. l;
- • raw egg - 3 pcs (for frying - 1 pc
- for minced meat - 2 pcs.);
- • bread crumbs - 2 glasses;
- • pickled mushrooms - 1 can (800g);
- • onions - 2 heads;
- • garlic - 4 cloves;
- • parsley - 4 sprigs;
- • cilantro - 2 branches;
- • salt to taste.
- For the second recipe (for 4 servings):
- • pork (loin) - 700 g;
- • beef - 200 g;
- • egg - 3 pcs;
- • onions - 2 pcs;
- • garlic - 1 clove;
- • ground crackers - 150 g;
- • fat - for frying;
- • butter for serving - 60 g;
- • salt - to taste;
- • ground pepper - to taste;
- • Fresh tomato or pickled cucumber - 1 pc.
- For the third recipe (9 slots):
- • Pork - 550 g;
- • Beef 200 g;
- • Onions - 4 pieces;
- • Garlic - 1 clove;
- • Parsley and dill greens - 3 sprigs each;
- • Tomato - 3 pcs;
- • Ketchup - 9 tbsp;
- • Mayonnaise - 150 g;
- • Hard cheese - 200 g;
- • Large Bulgarian pepper (red or yellow) - 2 pcs;
- • Salt
- pepper to taste.
Instructions
Step 1
Recipe 1. "Chicken Kiev".
• Pass the mushrooms through a meat grinder.
• Chop the garlic.
• Dice the onion.
• Fry mushrooms and onions. Add garlic to the resulting mass, mix well and cool slightly.
• Boil and chop one egg finely.
• Chop the greens.
• Add the egg and chopped herbs to the mushroom mixture.
• Salt the filling.
• Carefully separate the fillets at the breasts. Cut it and unfold it so that you get a solid layer. Beat it off, the thickness of the piece should be 5 mm.
• Place the filling on each bite. Join the edges to form a cutlet shape.
• Take one raw egg, add 1 tablespoon water and beat with a mixer or blender.
• Grease each cutlet with an egg, sprinkle generously with breadcrumbs.
• Pour oil into the pan and heat well. Fry the patties until golden brown.
• Place the sautéed patties in an oven-safe dish. And put in an oven preheated to 180 degrees for 25-30 minutes.
• When serving, pour over the cutlets with the juice that was formed during frying, then they will be even juicier.
• Garnish can be anything from mashed potatoes to boiled beans
Step 2
Recipe 2. Ilinsky cutlets • Peel the onion and garlic.
• Pork, beef, onion and garlic mince. Season with salt and pepper. Add 2 eggs. Mix everything well.
• Form patties. Brush each with a raw egg mixed with 1 tbsp. water, brew in breadcrumbs.
• Preheat a skillet with fat to 170 degrees. Fry the cutlets in a preheated skillet until crisp.
• After browning, reduce heat and place all patties in the skillet. And simmer until tender, adding a little water.
• When serving, pour melted butter over the cutlet. Place a side dish and a few slices of chopped fresh tomatoes or pickles.
Step 3
Recipe 3. "Bird's nests".
• Finely chop the greens.
• Scroll pork, beef, garlic and 1 onion through a meat grinder. Add chopped greens, salt and pepper and mix everything thoroughly.
• Pepper, tomato, 2 onions, cut into rings. Do not separate the onion into separate rings, as you cut it, let it remain so.
• Cut the cheese into pieces, about 5mm by 5mm.
• Put baking paper on a baking sheet, brush it a little with sunflower oil.
• Place 9 pepper rings on a baking sheet.
• Place the minced meat firmly in each ring and make a small indentation in the center.
• On each cutlet, in the well, put: 1 tsp. ketchup, onion, 1 tsp. mayonnaise, tomato, 1 tsp. mayonnaise, a slice of cheese.
• Place in an oven preheated to 170 degrees for 25-30 minutes.
• Decorate the finished "nests" with a sprig of parsley or dill. They can be served with or without garnish. They are very nutritious, juicy and delicious.
