Step 1
Chop the crab meat. This is best done with a sharp, heavy cleaver knife. Grate the lemon zest, peel the celery stalk and chop finely. Grind the hard-boiled egg, green onion feathers and fresh basil. Put all the ingredients in a bowl, add sour cream, freshly squeezed lemon juice, ground nutmeg, and a tablespoon of bread crumbs. Pepper and salt the mixture, stir until smooth.
Step 2
Use your hands to form balls about the size of an orange, flatten them slightly. Dip the patties in breadcrumbs, place on a flat plate and set in the cold for half an hour. Heat the olive oil in a skillet. Place the patties in a skillet and fry them on both sides until golden brown.
Step 3
Serve hot crab patties on a salad-lined platter. Garnish with lemon or lime quarters. Cutlets are eaten with lemon juice. They are also delicious with fresh sour cream and tomato and cucumber salad.

Cutlets made from crab meat, salmon and shrimps will also turn out to be very tasty. Free the salmon fillet from the bones. Boil the shrimp and peel. Chop crab meat, fish and shrimp into small pieces with a cleaver or chop them in a mixer. Finely chop fresh dill and bell peppers, place them with seafood. Season with salt, cream and freshly ground black pepper. Mix everything thoroughly.

Form into small rounded patties. Dip them in breadcrumbs or a little flour. Heat vegetable oil in a frying pan and fry the patties on both sides until golden brown. Place the food on pre-warmed serving plates. You can boil rice as a side dish. Garnish with dill and lemon wedges. A good accompaniment to this dish will be a bottle of chilled dry white wine.
