The largest number of dough recipes is for baked goods with apples. These are pies, charlottes, and just apples in the dough. Today we will replenish the recipe box with a tender apple muffin with the addition of semolina.
Ingredients:
- Chicken egg - 4 pcs;
- Granulated sugar - 185 g;
- Finely ground semolina groats - 200 g;
- Kefir - 150 g;
- Fresh apples - 200 g;
- Flour - 250 g;
- Mineral water (necessarily carbonated) - 100 g;
- Olive oil - 70 g;
- Raisins or dried apricots (seedless) - 200 g;
- Cognac or brandy with nutty flavor - 70 g;
Preparation:
- Break the chilled chicken eggs into a special container (glass) for a blender.
- Add granulated sugar and kefir to the same container to the eggs. Beat with a blender for 5 minutes. During this time, a homogeneous white mixture will be obtained.
- Rinse the apples and peel them from the skin, seeds and core. Chop finely, add to the whipped mass.
- The turn came to add olive oil and mineral sparkling water to the container. Beat with a blender.
- Now add cognac or brandy. Continue whisking with a blender for 1-2 minutes.
- Pour boiling water over raisins or dried apricots and leave for 15 minutes.
- Drain water from a bowl of raisins and transfer it to a container with a whipped homogeneous mass. Stir well again.
- Pour flour and semolina into the dough mass in a thin stream. Stir and leave to rise for 20 minutes.
- Transfer the dough into a pre-prepared baking dish (or individual muffin tins) and put in an oven preheated to 190 degrees for 55-60 minutes. You need to remove the finished muffins from the molds only when they are cold.
These muffins are ideal as a light early breakfast to complement tea or coffee, and as an afternoon snack for children in addition to warm milk or cocoa.
