Ingredients:

  • Chicken egg - 4 pcs;
  • Granulated sugar - 185 g;
  • Finely ground semolina groats - 200 g;
  • Kefir - 150 g;
  • Fresh apples - 200 g;
  • Flour - 250 g;
  • Mineral water (necessarily carbonated) - 100 g;
  • Olive oil - 70 g;
  • Raisins or dried apricots (seedless) - 200 g;
  • Cognac or brandy with nutty flavor - 70 g;

Preparation:

  1. Break the chilled chicken eggs into a special container (glass) for a blender.
  2. Add granulated sugar and kefir to the same container to the eggs. Beat with a blender for 5 minutes. During this time, a homogeneous white mixture will be obtained.
  3. Rinse the apples and peel them from the skin, seeds and core. Chop finely, add to the whipped mass.
  4. The turn came to add olive oil and mineral sparkling water to the container. Beat with a blender.
  5. Now add cognac or brandy. Continue whisking with a blender for 1-2 minutes.
  6. Pour boiling water over raisins or dried apricots and leave for 15 minutes.
  7. Drain water from a bowl of raisins and transfer it to a container with a whipped homogeneous mass. Stir well again.
  8. Pour flour and semolina into the dough mass in a thin stream. Stir and leave to rise for 20 minutes.
  9. Transfer the dough into a pre-prepared baking dish (or individual muffin tins) and put in an oven preheated to 190 degrees for 55-60 minutes. You need to remove the finished muffins from the molds only when they are cold.

These muffins are ideal as a light early breakfast to complement tea or coffee, and as an afternoon snack for children in addition to warm milk or cocoa.
