Chupe or chupi is the soup of the Indians of the Inca empire. The main ingredients are milk and potatoes. Traditionally, fresh corn was used, but you can substitute canned for it - it turns out to be delicious too.
It is necessary
- For four servings:
- - potatoes - 6 pieces;
- - one onion;
- - cheese - 200 g;
- - milk - 1 l;
- - two egg yolks;
- - two cans of canned corn;
- - butter - 1 tbsp. the spoon.
Instructions
Step 1
Fry the onions in butter.
Step 2
Cut the potatoes into cubes, put them in a saucepan, add fried onions, cover with boiling water - it should cover the contents of the pan, put on moderate heat.
Step 3
After 15 minutes, add boiling milk, corn, diced cheese and cook together for 5 minutes.
Step 4
Remove the pan from the stove, add the egg yolks, mix. Sprinkle with fresh herbs. Argentinian chupe milk soup is ready!
