There are a lot of options for making minestrone - Italians do not adhere to strict rules when preparing this soup, but simply use any seasonal vegetables from the nearest market. Here is one of the most common minestrone recipes.

It is necessary

    • 1 onion;
    • 2 carrots;
    • 1 large stalk of celery;
    • 450 g of tomatoes in their own juice;
    • 1 large potato;
    • 1 zucchini;
    • 400 g canned beans;
    • 200 g green beans;
    • 100 g of short pasta;
    • 1 clove of garlic;
    • a pinch of hot red pepper;
    • a pinch of ground black pepper;
    • 1/2 tsp dry rosemary;
    • salt;
    • grated parmesan;
    • basil;
    • olive (sunflower) oil.

Instructions

Step 1

Pour olive oil into the skillet. Place chopped onions, carrots and celery into the skillet. Add hot red pepper, black pepper, salt and rosemary. Cook over low heat, stirring occasionally, for 5-7 minutes, until the onions are golden brown.

Step 2

Mash the tomatoes in their own juice with a fork. Add tomatoes and juice to a skillet with onions, carrots and celery. Simmer vegetables for 1-2 minutes.

Step 3

Cut the potatoes and zucchini into cubes. Drain the liquid from the canned beans, rinse the beans. Add potatoes, zucchini, and beans to the skillet. Simmer all vegetables for 1-2 minutes.

Step 4

Pour 1.7 L of water into a saucepan. Transfer all the vegetables from the pan to a pot of water. Cut the green beans into small pieces and add to the pot as well. Bring the vegetable stock to a boil. Then cook the soup until the vegetables are tender.

Step 5

7-10 minutes before the vegetables are ready, add pasta to the soup (any kind of short pasta will do).

Step 6

Turn off the fire. Add grated garlic and thinly sliced basil to the soup to taste. Mix everything and hold under the lid for about 5 minutes.

Step 7

Add grated Parmesan when serving.
