Summer is sun, relaxation and time for the fragrant strawberry that makes delicious desserts like this one. It is unusual in that strawberries are here not only as a decoration for a cake. It is also included in the cream and in the dough. Such a dessert will be a beautiful addition to tea drinking and will pleasantly surprise guests.
It is necessary
- For strawberry muffins:
- - 1 2/3 st. flour
- - ¾ tsp baking powder or baking powder
- - ¼ tsp soda
- - ¼ tsp salt
- - ½ tbsp. unsalted softened butter
- - ¾ st + 2 tbsp Sahara
- - 1 large egg
- - 2 egg whites
- - 1/3 Art. fresh strawberry puree
- - ¼ Art. buttermilk
- - ½ tsp vanilla extract or vanillin on the tip of a knife
- 5 drops of red food coloring (optional)
- - ¾ Art. chopped fresh strawberries
- - 12 paper muffin cups
- - 12 pcs. small strawberries - for decoration
- For strawberry cream:
- - ½ tbsp. + 2 tbsp strawberry puree
- - ½ tbsp. softened butter
- - ¼ Art. salted softened butter
- - 2 ½ tbsp. icing sugar
- - ¼ tsp vanilla extract or vanillin on the tip of a knife
- - 4 drops of red food coloring (optional)
Instructions
Step 1
Turn the oven on to preheat to 350 degrees.
Step 2
Sift flour into the first bowl, add baking powder, baking soda, salt. Beat with a mixer.
Step 3
In a second bowl, beat the softened butter with a mixer and sugar until pale and fluffy. Add 1 egg, continue beating. Add 1 egg white each.
Step 4
In a third bowl, whisk the buttermilk, 1/3 tbsp. strawberry puree and vanilla extract.
Step 5
Combine the contents in the second and third bowl, gradually adding the flour mixture from the first bowl. Add the diced strawberries and stir with a spoon.
Step 6
Fill of dough with batter. Bake in a preheated oven for 20-23 minutes, check the readiness of the muffins with a toothpick. Remove the prepared muffins from the oven and let cool.
Step 7
Now prepare the strawberry cream. ½ tbsp. +2 tbsp In a small saucepan, heat the strawberry puree over medium heat for 12-14 minutes, stirring occasionally. Let the strawberry puree simmer and reduce in volume. Let the hot strawberry puree cool.
Step 8
Use a mixer to beat salted and unsalted butter until white. Add 1 tbsp. powdered sugar, strawberry puree, vanilla extract, optional red dye. Whisk. Add the remaining powdered sugar and continue whisking until fluffy.
Step 9
Place some chopped fresh strawberries on top of each finished muffin.
Step 10
Fill a pastry bag with strawberry cream, apply to the top of the strawberry muffin. Garnish each cake with a whole strawberry.
