A cup of coffee and filled biscuits is a breakfast that can cheer you up in the morning. Naturally, the easiest way is to buy muffins, but nothing can replace homemade cakes, so I recommend making them yourself at home, especially since it's not difficult at all.
How to make cottage cheese muffins
- 400 grams of flour;
- 500 ml of milk;
- 100 grams of sugar;
- two eggs;
- a tablespoon of vegetable oil;
- 150 grams of cottage cheese;
- a pinch of salt;
- a teaspoon of baking powder.
Mix eggs with salt and 50 grams of sugar, beat everything well (you need to beat until the mass doubles). Heat the milk slightly and pour into the prepared egg mixture. Gently add sifted flour and baking powder to this mass and mix everything gently.
Lubricate the baking dishes with vegetable oil (if using silicone molds, you can skip this step). Wipe the cottage cheese through a metal sieve, add sugar to it and stir (you need to stir until the sugar dissolves, to simplify the task, sugar can be replaced with powdered sugar).
Spread a tablespoon of dough on the bottom of the molds, then make a depression in each and put a tablespoon of sweet fluffy cottage cheese, put a tablespoon of dough on top again. Place a baking sheet with tins in an oven preheated to 190 degrees for 20-25 minutes. Let the prepared muffins cool slightly, then you can serve them to the table.
How to make chocolate-filled muffins
- 100 grams of butter;
- 50 grams of sugar;
- 200 grams of chocolate;
- two eggs;
- a tablespoon of cocoa powder;
- 70-80 grams of flour;
- two tablespoons of powdered sugar (for decoration).
Place the chocolate in a metal bowl and melt it in a water bath (you can use the microwave to make it easier to prepare the muffins). Mix it with softened butter. Using a mixer, beat the eggs with sugar and salt, then add flour and cocoa to this mixture and mix gently so that the dough does not settle.
Lubricate the molds with butter, put in each a small portion of dough (no more than a tablespoon), then a portion of chocolate with butter, and again a portion of dough. Place the molds in a 200-degree oven for 15 minutes. Transfer the finished muffins to a tray, let cool slightly, then sprinkle with powdered sugar and serve.
