Pancakes are a dish of ritual cuisine that came to us from time immemorial, and has remained so. It is difficult to find a person whose childhood would not have been associated with the memory of Sunday breakfasts with slides of pancakes baked by mom or grandmother, which are so delicious to eat with sour cream. There are a lot of pancake recipes. The most popular are filled pancakes. Moreover, fillings are very different - fruit, fish, meat, vegetable, mushroom and others. Try apple-filled pancakes.

It is necessary

    • For pancakes:
    • 0.5 liters of milk;
    • about 250 grams of flour;
    • 2 eggs;
    • 0.5 tablespoons of sugar;
    • 0.25 teaspoons of salt;
    • 1 tablespoon vegetable oil.
    • To grease the pan:
    • a piece of bacon (bacon).
    • For filling:
    • 250 grams of sweet apples;
    • 2 tablespoons of sugar;
    • cinnamon.
    • For frying:
    • ghee or margarine.

Instructions

Step 1

Whisk the eggs and half the milk lightly. While whipping, gradually add the pre-sifted wheat flour into the milk-egg mixture in a thin stream (make sure that no lumps form). Continuing to beat slowly, pour in the remaining milk, a spoonful of vegetable oil. Add salt and sugar at the end. You should have a moderately liquid pancake dough with the consistency of kefir.

Step 2

Baking Pancakes Place a flat pan with low sides on the fire (if you have a pancake maker, use it) and wait until it is thoroughly heated. Lubricate the bottom of the pan with a piece of lard and gently, spreading in circular motions over the entire surface, pour a portion of the dough onto it. Fry the pancake for 1.5-2 minutes (it should be completely baked), then remove it from the pan with a spatula and put it on a plate. You do not need to fry the other side. Grease the pan with lard again and pour a portion of the dough onto it, distribute it over the entire surface of the bottom of the pan. Bake the pancakes until your dough is finished.

Step 3

Preparing the filling When the pancakes are ready, you need to tackle the filling. To do this, peel the apples from the core and peel, chop finely, put in a saucepan and cover with sugar. Boil the fruit over medium heat until almost softened, at the end of cooking add a pinch of cinnamon (can be replaced with orange, lemon or tangerine zest). The pancake filling is ready.

Step 4

Preparing spring rolls Put a frying pan on the fire, put ghee or margarine in it. While the butter is melting, make the pancakes. Place the pancake with the ruddy side up, put a tablespoon of filling on it (closer to the middle) and carefully wrap it in the form of an envelope. Fry the resulting "envelopes" and serve hot, sprinkled with powdered sugar. Apple pancakes can be served with jam, jam, honey, syrup and, of course, fragrant freshly brewed tea.
