Instructions
Step 1
First you need to prepare the brine. Put salt, bay leaf, peppercorns and cloves in the water. The brine must be cooked as much as necessary so that the piece of meat floats freely in it. Salt needs 5 tablespoons for every liter of water. Put the brine on gas and bring to a boil and simmer for 3 minutes. Cool the brine and remove all spices from it.
Step 2
Rinse the meat thoroughly under running water. Place a piece of meat in a saucepan with cold brine and close the lid. Refrigerate the pot for 3 days. Turn the meat 3 times a day.
Step 3
Remove the meat from the refrigerator after three days. Wipe it dry with a tissue. Place the meat on an incline and place the oppression on top. Leave the meat for 2 hours. This is necessary in order to drain excess juice from the meat.
Step 4
Rub a piece of meat with red pepper, paprika and any spices you like. Wrap a piece of meat in clean cheesecloth. Place the meat in a sealed container and refrigerate for 1 week.
Step 5
After a week, remove the meat from the refrigerator, remove from the cheesecloth and rub again with seasonings and spices. Wrap the meat again in clean cheesecloth and hang the meat in a well-ventilated area for 2 weeks. The room where the jerky weighs should not be high humidity. Cut the finished meat into thin pieces with a sharp knife and serve.
