Pumpkin, even cooked in the simplest way - steamed or baked in the oven - is a very tasty and healthy dish. Pumpkin casseroles, especially with the addition of other vegetables, can be either a side dish for meat, fish or chicken, or serve as an independent dish.

    • Yellow pumpkin - 1 kg
    • Potatoes - 2 large tubers
    • Cheese - 100 g
    • Butter - 100 g
    • Eggs - 4 pcs.
    • Sugar - 1 tsp
    • Breadcrumbs
    • Salt
    • Ground black pepper
    • Nutmeg

Instructions

Step 1

Peel the pumpkin, remove the seeds and pulp, cut into cubes, put in a saucepan, cover with water so that it covers the pumpkin, add a spoonful of sugar and cook for 30 minutes.

Step 2

Peel the potatoes, cut into large pieces, cook in a separate saucepan.

Step 3

Drain the water from the finished pumpkin, and wipe the pumpkin itself through a sieve.

Step 4

When the potatoes are boiled, pour the broth into a separate bowl and mash the potatoes with a special crush or spoon. In the event that it seems to you that the puree is dry, dilute it with potato broth. Keep in mind, however, that you will need to add eggs to the puree to make it thinner.

Step 5

Combine mashed pumpkin and mashed potatoes.

Grate the cheese on a fine grater.

Step 7

Add half the butter, grated cheese, eggs to the puree, salt and pepper, season with nutmeg and mix well.

Grease a square or rectangular shape with butter. Cut the remaining butter into slices.

Preheat the oven to 180-200 degrees.

Put the resulting puree into a mold, sprinkle with breadcrumbs, put a few slices of butter on top of them.

Bake for 20 minutes.

After you have taken the casserole out of the oven, cool it down, then, without removing it from the mold, cut into portions and arrange on plates.
