Step 1
Keep fresh dates in the refrigerator for no more than two months (like any other fruit, they do not store well if washed first). Wrap dates in paper or place them in a container with a lid, as fruits absorb the odors of food in the refrigerator. From more than four hundred and fifty varieties of dates, varieties that are more and less suitable for long-term storage stand out; the most suitable for storage are sharka (the most common variety) and ar-rusanna; sharka - a date of light red color, in dried form - almost black; ar-rusanna - yellow, ovoid and medium in size.
Step 2
Store compressed dates under normal conditions, at room temperature. They do not require special storage conditions, as they have been pasteurized.
Step 3
Keep dried or dried dates in a cool, dark place. Place them in a glass container and close the lid tightly. The bottom shelf of the refrigerator is also suitable for storage. At a temperature of about zero degrees, dates can last for about one year, in the freezer they can be stored for five years.
Step 4
Make a paste with fresh dates. Wash the fruit and remove the pit. If you come across a very soft variety, put the fruit in the freezer for an hour, this will make it easier to cut and remove the pit. Put a glass of fruit in a blender, add half a glass of water, chop until smooth, place in a container, close the lid and store in the refrigerator for up to two weeks.
Step 5
Make a paste with fresh dates, as the Arabs do for long-term fruit storage. Wash the dates and remove the seeds, put a glass of fruit and half a glass of water into a small bowl, cook over low heat until softened (make sure that all the water does not evaporate), then mash until smooth, cool, put in a container and close tightly. The paste can be stored in the refrigerator for several months.
