The rumen is part of the stomach in ruminants. Many people consider it unsuitable for food and only buy it for feeding dogs. Completely in vain! When properly prepared, tripe is very tasty and is used in many dishes of Polish and Czech cuisine.

Instructions
Step 1
You can buy tripe in the meat departments of the market, it is better to look for it where they sell beef. Sometimes you may come across a badly washed scar. In this case, you need to rinse very thoroughly and clean it from all sides from adhering straws and dirt. If you need a small amount of tripe, then it is better to look for it in stores, where it is packaged in small portions.

If the scar is thick and tough, then to soften it, you need to marinate it a little in a mixture of water, salt and vinegar for 6-8 hours.
Step 3
Then decide on the dish for which you are preparing the tripe. Sometimes it is put in a dish whole, with a fuzzy top layer, and in some recipes only the internal muscle smooth tissue of the rumen is used. If you got the second option, then the fleecy part needs to be removed. Do this very carefully. If the scar is fresh, then there should be no problems with removing the layer. If you have pets, you can feed your pets instead of throwing away the rumen shell.
Step 4
Then the scar must be thoroughly rubbed with salt and allowed to lie for half an hour in a cool place, after which it must be thoroughly rinsed several times in running water. This is done to remove foreign odors that may be present during cooking.
Step 5
Cut the washed tripe into large chunks and place in a pot of cold water. Once the water boils, wait about five minutes, then remove the pan from the heat, drain the water and rinse the scar thoroughly again.
Step 6
Then pour water into the pot, salt it, add again and place the tripe on the stove in cold water and now it needs to be boiled for 3-4 hours. The readiness of the scar is determined as follows: pierce it with a fork, it should not spring at the same time.
Step 7
After the tripe is cooked, cool it down and chop depending on the recipe.
