Real Ukrainian borscht - what could be better as a first course! You don't have to persuade your child to eat "a spoon for mom, a spoon for dad", because no other soup can be compared to this soup! Borsch is a delicious, hearty and beautiful dish. Here is a recipe for pork borscht.

- Water - 3L
- Pork on the bone - 0.5 kg
- Onions - 2 pcs.
- Carrots - 2 pcs.
- Beets - 2 pcs.
- Potatoes - 5 pcs.
- Cabbage - 1/2 head of cabbage
- Dill
- Parsley
- Garlic
- Tomato paste
- Pork fat (or vegetable oil)
Instructions
Step 1
Wash the meat under running cold water. Without cutting, place in a saucepan and cover with cold water. Put on high heat.
Step 2
Peel the onion and immerse it entirely in water. Peel the carrots, cut in half and dip in water. This will give the broth a distinct flavor. Also, vegetables will absorb harmful substances boiled from meat.
Step 3
After boiling, reduce heat so that the water "gurgles" slightly, but does not boil too much. Cook the meat for about an hour and a half, periodically skimming it off.
Step 4
When the broth is ready, remove the onions and carrots from the broth. They won't be useful anymore. It is not recommended to eat them - to prepare salads, the second, etc. Better to throw it away.
Step 5
While the broth is cooking, fry it. Peel the onion and chop finely. Peel and grate the carrots. Do the same with the beets. Put the pork fat in a hot skillet and melt it. If you use vegetable oil instead, heat the oil. Place the onion in the pan. When it's browned, add the carrots and beets. Stir, lightly fry over high heat - about two minutes. Do not keep the frying on high heat for a long time - the beets will lose their color, and instead of rich red borscht will acquire an unpleasant brown tint. Add a tablespoon of tomato paste to the roast. Reduce heat to low, cover skillet and simmer for 5-7 minutes. The frying is ready.
Step 6
Wash the potatoes, peel and cut into small cubes.
Step 7
Remove the meat from the broth and place on a plate to cool. Pour potatoes into the broth.
Step 8
While the potatoes are boiling, cut the meat into small pieces.
Step 9
Add roast and chopped meat to the saucepan.
Step 10
Chop the cabbage. Add to borscht. Close the lid and cook for 5-7 minutes.
Step 11
Turn off the fire. Chop the dill, parsley, garlic and add to the borscht. Let the borscht brew for about half an hour and serve.
Step 12
Borscht is best served with black bread, garlic and sour cream. Bon appetit!
