Pizza "Four Seasons" is a unique combination of the taste of four separate pizzas. One dish successfully combines tomatoes and mozzarella (Margarita pizza), artichokes and olives (Caprichoza), ham and mushrooms (Prosciutto and fungi), basil and anchovies (Achuge).

- Ingredients for 4 pizzas with a diameter of about 20 centimeters:
- For the test:
- - flour - 500 g;
- - salt - 1 teaspoon;
- - fresh yeast - 10 g;
- - olive oil - 15 ml;
- - warm water - 250 ml.
- For filling:
- - ripe tomatoes - 300 g;
- - basil leaves for decoration;
- - olive oil - 45 ml;
- - salt and pepper to taste;
- - champignons - 250 g;
- - minced garlic clove;
- - chopped fresh parsley - a tablespoon;
- - artichokes in olive oil - 100 g;
- - olives - 50 g;
- - any boiled ham - 150 g;
- - fillet of anchovies - 8 pieces;
- - mozzarella - 200 g;
- - basil - 8-10 leaves.
Instructions
Step 1
Put all the ingredients for the dough into a large bowl, pour in warm water and olive oil. Knead a homogeneous dough and leave in a warm place under a damp towel to double the dough. Cut the risen dough into 4 parts, form 4 balls, transfer to a dish sprinkled with flour, cover with a towel on top and leave for 1 hour. At this time, we begin to prepare the filling.
Step 2
We make cross-shaped cuts on the tomatoes, put them in boiling water for 1 minute, so that you can easily peel them off. Cut the peeled tomatoes into 4 parts, remove the seeds, grind in a blender until smooth. Add 2 tablespoons of olive oil (30 ml) and a little salt, set aside.
Step 3
We wash the champignons well, wipe with a dry cloth to remove excess water, cut into slices. Fry the mushrooms in one spoonful of olive oil along with chopped parsley and garlic for 3 minutes over high heat. Add salt and pepper to taste, set aside.
Step 4
From the dough we form 4 pizza bases with a diameter of about 20 centimeters. We put them on baking trays greased with olive oil or in separate forms (if any). Lubricate the dough evenly with tomato puree.
Step 5
Preheat the oven to 250 degrees. Cut artichokes into neat pieces, ham - strips, anchovies - lengthwise into 2-3 pieces. We divide all the ingredients so that they are enough for 4 pizzas in the same quantity.
Step 6
We visually divide the pizza base into 4 sectors. Put mushrooms and ham in one, artichokes and olives in the second, anchovies in the third, and leave the fourth sector empty. We send the pizza to the oven for 10 minutes. At this time, cut the mozzarella into pieces of medium thickness.
Step 7
Remove the pizza from the oven, distribute the mozzarella evenly over the entire surface and return it to the oven for 2-3 minutes to melt the cheese. Garnish with parsley or basil before serving.
