Blue (also called red, purple and Yalta) is a semi-hot onion, ideal for adding to various salads. White is the sweetest, almost not spicy variety. It is used successfully in non-cooked dishes such as salads and pickles. It is from white onions that the French prepare their famous onion soup.

The sharpness of onions is influenced not only by the variety, but also by the shape and size of the bulbs. The sharpest are those that are flattened and small in size. The least sharp ones are round and large. This largely depends on the conditions in which the onion grew. In arid soil, bulbs absorb very little moisture and, as a result, become sharper than onions grown in a more favorable location.

If you are purchasing onions for long-term storage, choose medium-sized yellow onions. The fact that it is a yellow onion of a small diameter that lasts longer has been proven for centuries.
Step 4
Inspect and smell each onion at the time of purchase. The layer of scales should be dense, not damaged. It is important that the fruits are firm and dry to ensure their freshness. The bulb will not germinate if the tail at the top is completely dry and the base is flat, rounded, without white shoots. The smell of onions should not be very bright and, in no case, putrid.

For more confidence that the onions will not rot, dry them additionally at home. Store onions in a well-ventilated environment - in a basket, box, or hanging bundle. Use these useful tips and then fragrant onions will be in your home all year round.
