Step 1
To make yeast-based pizza dough, you will need: 500 grams of flour, 40 ml of olive oil, 5 grams of dry fast-acting yeast, 0.5 tsp. sea salt. The quantity shown is for 2 round pizzas with a diameter of 30 cm. Start the process of making the pizza dough by sifting the flour directly onto the table or into a large, wide bowl. After that, add salt, yeast to the flour and make a dimple in the middle. Mix 300 ml of warm water and pour over the well in the flour. The water must be boiled.
Step 2
Stir in the flour and pick it up from the edges. Be prepared for the lumpy dough first. But little by little they will disperse. Knead the dough on the table with your hands until it becomes smooth, tight, elastic. The finished dough should not stick to your hands. You can add cereals as needed, but do not get carried away with this process, as as a result, the dough can become steep. From the table, transfer the finished dough into a bowl, having previously greased it with oil. Cover the dough with cling film and place it close to the battery to rise.
Step 3
The dough should double in volume. Crumple the dough by releasing air from it. Now you can start making pizza. Do not use a rolling pin for rolling. Knead and stretch the dough with your hands. For thin pizza, make the width of the "pancake" no more than 0.5 cm.
Step 4
Another recipe for pizza dough: with sour cream. It turns out to be more tender and softer than yeast. In addition, such a base is tasty and aromatic. To prepare sour cream dough, take: 2 glasses of flour, 1 glass of sour cream (fat content 20%), 2 eggs, 2 tablespoons. butter, 1 tbsp. sugar, 0.5 tsp. salt. Sift the flour and place it in a bowl. Add 2 chicken eggs, 1 glass of sour cream, butter, salt. Mix all ingredients thoroughly. Form the dough into a ball, cover it with a cloth and leave for 40 minutes. Another recipe for sour cream dough involves adding 0.5 tsp. slaked soda. This should be done after all the ingredients have been mixed. The baking soda helps the dough rise as it bakes.
Step 5
Note that adding more flour to the dough will dry it out. If you add less flour, the dough will be more tender and runny. You can easily distribute it on a baking sheet. One way or another, the dough should be such that you can roll a ball out of it. When baking, grease the surface of a baking sheet or pizza dish. You can use special cooking paper. Thus, you will get rid of the problem of peeling the finished pizza from the mold.
