In addition to juicy red tomatoes, green tomatoes are also used in cooking. Unripe fruits have a spicy sour taste and go well with many products. The following creative dishes can be prepared from green tomatoes.
Fried green tomatoes
You will need the following foods: 4 large green tomatoes, 1 chicken egg, a third of a glass of milk, 3 tbsp. tablespoons of wholemeal cornmeal, 3 tbsp. tablespoons of vegetable oil, hot Tabasco sauce, salt and black pepper to taste. You can substitute cornmeal for breadcrumbs and tabasco sauce with chili sauce.
Wash the tomatoes and cut them into 1 cm thick slices. Beat the egg with milk and add the sauce to the mixture. In a separate bowl, combine the cornmeal with salt and pepper. Heat the oil in a skillet. Dip each tomato slice first in the egg and milk mixture and then in the flour. Sear the tomatoes for 2 minutes on each side.
Green tomatoes will be more flavorful if you use the fat left over after frying the bacon instead of vegetable oil.
Green tomato soup
You will need the following foods: 3 medium green tomatoes, 400 ml broth, 1 small onion, 1 tbsp. a spoonful of butter, 1 medium carrot, 3 tbsp. spoons of rice, 3 garlic cloves, 1 teaspoon of sugar, parsley and salt.
Peel the onion and cut it into small cubes. Melt the butter in a deep bowl and simmer the onion in it until transparent. Cut the green tomatoes into small wedges, grate the carrots on a medium grater. Add tomatoes and carrots to the onions and pour over the broth. Let the broth simmer for 10 minutes. Then add rice, garlic, sugar and salt to the broth. Cook the soup until the rice is tender. Grind the finished soup with a blender or rub through a sieve. Sprinkle chopped parsley over the soup when serving.
Canned Green Tomato and Bell Pepper Salad
You will need the following products: 4 kg of green tomatoes, 3 kg of red bell pepper, 2 kg of onions, a head of garlic, a large bunch of parsley, 150 g of sugar, 150 g of salt, 100 ml of nine percent vinegar, black peppercorns to taste.
Wash the bell pepper and remove the seeds. Blanch the peppers in boiling water for 2 minutes. When the pepper has cooled, cut it into small strips. Wash the green tomatoes and cut them into 2 by 2 cm cubes. Peel the onion and garlic, cut the onion into rings and the garlic into slices. Wash, dry and chop the parsley. Combine vegetables, herbs, salt, sugar, vinegar and black pepper in an enamel bowl. Place the salad tightly in one-liter jars and sterilize them in boiling water for 20 minutes.
Jam from green tomatoes
You will need the following products: 1 kg of green tomatoes, 1 orange, 1 lemon, 660 g of sugar, 60 ml of water, 50 g of pickled ginger.
Remove the seeds from the lemon and orange and place them in a gauze bag. Cut the citrus fruits together with the peel, add water to them and grind with a blender. Put the resulting mixture in a saucepan. Cut the green tomatoes into small cubes and add to the citrus fruits in the saucepan. Put the saucepan on the fire and simmer the jam after boiling for 10 minutes. Then add the pitted gauze bag, sugar and ginger to the jam. Stir the jam well to dissolve the sugar. Bring the jam to a boil and cook, stirring occasionally, for half an hour. When the jam is done, take out the pouch with bones.
