Like many food products, jars of honey must be stored in a dark place, since the beneficial substances begin to rapidly disintegrate under the influence of visible light radiation. It is best to pour honey into a glass, enamel or ceramic sterilized container with a tight-fitting lid and place it in a dark cabinet or closet. Honey storage temperature is from 5 to 25 ° C.

During storage, the lid must be tightly closed, since honey can both give and absorb moisture. If the room where honey is stored is humid, and its lid is not closed hermetically, this may cause the honey to turn sour. In addition, odors can also affect honey, as it is very sensitive to them.

Iron, copper or galvanized containers should not be used to store honey, because when it comes into contact with zinc and copper, honey enters into a chemical reaction with them, as a result of which poisonous salts are formed.

Honey can also be stored in wooden barrels, the most suitable material for them is neutral linden. Wood can affect the properties of honey: in an aspen barrel it can acquire a bitterness, in an oak barrel it can darken, and in a barrel of their coniferous trees it can pick up a resinous smell.

The optimal shelf life of honey is one year, after which its valuable properties begin to decrease, vitamins are destroyed and the amount of acids and sucrose increases.

If honey is candied during storage, then it can be melted in a water bath, but it is better not to do this anyway, since honey is very sensitive to temperature - already at 37-40 ° C it loses many of its beneficial properties. For the same reason, you should not put honey in hot tea, it is more useful to drink it with a bite.
