Usually pancakes are served as a separate dish, however thin and tender pancakes can become components of various salads, making them original and unusual. Pancake salads will decorate the table at a holiday, and will also delight you during a regular lunch or dinner.

Pancake and chicken fillet salad

Chicken and pancake salad turns out to be unusual and tasty. You will need:

- chicken fillet - 1 pc.;

- chicken eggs - 5 pcs.;

- 2 tbsp. l. table vinegar;

- onions - 1 pc.;

- lettuce leaves;

- vegetable oil (for frying pancakes);

- mayonnaise (to taste);

- salt, ground pepper (to taste).

Wash the chicken fillet in cool water and boil over low heat until tender in lightly salted water. Cool the boiled fillet naturally and take the chicken into fibers. Peel and chop medium-sized onions in half rings, and then pour a solution of vinegar and boiled water in a 1: 2 ratio, add a little sugar and salt. The onion rings are marinated for 20-30 minutes. After the specified time, the onions must be washed in cold water, and then left to dry.

In the meantime, prepare the egg pancakes. Beat eggs and salt with a whisk or mixer, and then fry in a frying pan greased with vegetable oil. For the salad, you will need 3-4 pancakes. Pancakes need to be fried on both sides and then cut into thin strips.

Combine all ingredients in a bowl: pancakes, onions, chicken. Season the salad with mayonnaise to taste, salt, add pepper and mix well. Rinse the lettuce leaves and spread the pancake salad on top, which can be decorated with finely chopped herbs (parsley, dill, etc.) or olives on top.

Pancake salad with meat

Treat your family or guests to a delicious, hearty and unusual pancake salad with meat. You will need:

- 300 g of beef (fillet);

- onions - 1 pc.;

- chicken eggs - 2 pcs.;

- 2, 5 tbsp. l. starch;

- vegetable oil (for frying pancakes);

- salt (to taste).

Rinse the beef and then cook until tender in salted water over medium heat. Cool the meat and cut into strips.

In the meantime, prepare the pancakes. Beat the chicken eggs with salt and potato starch, and then in a frying pan greased with vegetable oil, bake thin pancakes, which then need to be cut into strips. For a salad, 4-5 pancakes are enough.

Peel and cut onions into thin half rings. Put the onion rings in a bowl, and then cover with boiling water for 10-15 minutes, then rinse the onion with cold water. This procedure will help make the onion really crispy.

Combine all the ingredients in a salad bowl: meat, pancakes, onions. Do not forget to salt and pepper the salad to your liking, and then refrigerate it for 2-3 hours.
