Crispy shrimp bags

This original dish of Japanese cuisine will surely appeal to gourmets and exotic lovers. To make crispy shrimp bags, you need to take:

- 200 g of wheat flour;

- 1 glass of water;

- 200 g shrimp;

- salt;

- 1/2 cup vegetable oil;

- ½ cup heavy cream;

- 1 tbsp. l. red caviar.

First of all, prepare the dough. To do this: Divide the flour into 2 parts and add to separate bowls. Boil ½ cup water and add boiling water to one bowl of flour and ice water to the other. Knead the dough, then combine the dough from both bowls, cover with a napkin and leave for 15 minutes.

Shrimp should not be cooked for a long time. This makes their meat dry and "rubbery" in taste.

Peel the shrimp from the shell, remove the intestinal vein and cook in salted water for 1-2 minutes. Then discard the shrimp in a colander.

Form the dough into a rope about 3 centimeters thick and divide it into 8 walnut-sized pieces. Dip each in flour and roll into thin circles. Place 2-3 shrimps on top of each. Then form pouches from circles and fasten the edges. Place the prepared pouches on a floured table and cover with a napkin and leave for 20 minutes.

Heat ¼ cups of vegetable oil in a deep frying pan, then place the bags on the bottom with the tails up and fill with cold water so that they are covered to the middle. Then cover the pan with a lid and simmer for 3 minutes.

After this time, pour the remaining vegetable oil drop by drop into the bags and simmer for another 10 minutes, until the water evaporates and the bags become crispy.

Prepare the sauce. To do this: bring the cream to a boil and cook, stirring occasionally, for 5 minutes until thickened. Then remove from heat, add red caviar and stir gently. Place a bowl of warm sauce in the center of a large flat dish, and place shrimp bags around.

Green tea ice cream

You can also delight and surprise guests with an original Japanese dessert - green tea ice cream. To prepare it you will need:

- 6 eggs;

- 100 g of icing sugar;

- ½ cup of strongly brewed green tea;

- 1 tsp. soy sauce;

- 1 tsp. lemon juice;

- 1 glass of heavy cream (33%);

- sprigs of mint or fresh berries.

Pre-cool the eggs well, then separate the yolks from the whites and beat the whites with half the powdered sugar until a dense foam is obtained.

The most popular green tea in Japan is matcha powder, which is also used as a condiment for desserts. In addition, matcha is the protagonist of traditional Japanese tea ceremonies.

In a separate bowl, combine the egg yolks with strong brewed tea, soy sauce, and lemon juice. Then add the remaining icing sugar to the resulting mixture and mix everything thoroughly. Then put the prepared mass in a water bath and beat it until fluffy, strong foam.

Beat heavy cream with a whisk, mixer or blender until frothy. Stir gently to combine all components. Put the mixture in a mold and place in a cool place for 1-2 hours to freeze.

Using a special spoon, shape the finished ice cream into balls and place them in portioned bowls, vases or wine glasses. Serve green tea ice cream garnished with mint leaves or fresh berries.
