  • - cream 250 ml;
  • - ground black pepper;
  • - salt.

Instructions

Step 1

Wash the meat, dry it with a paper towel and cut into even equal circles - escalopes. Use a hammer to beat lightly on both sides.

Step 2

Dip the spinach in boiling water for 15 seconds, then immediately transfer to a bowl of ice water. Then chop most of it for the sauce, and leave a little for garnish. Peel and chop the garlic and divide into 2 parts. Toss one part with chopped spinach. In hot vegetable oil, fry the spinach and garlic, pour in half the cream, and bring to a boil.

Peel the onion and cut into small cubes. Rinse and chop the basil, leaving a few leaves for garnish. Heat the oil in a separate skillet and fry the onions. Then pour in the remaining cream and thicken the sauce. Next, add fresh basil. Separate the yolks from the whites and mix them with the sauce.

Step 4

Boil the asparagus in salted water. Season the meat with salt and pepper, fry in a pan on both sides for 1 minute. Then, place the meat in a baking dish, top with the spinach sauce, and lay out the cheese slices. Bake the meat for 7 minutes at 180 degrees.

Step 5

Put the basil sauce on a plate, top with pieces of meat, garnish with asparagus and spinach next to it.
