Buglama is a Caucasian dish. It can be cooked with a variety of vegetables, not only lamb, but also beef or chicken.

Step 1
Cut the lamb into small cubes. Peel the potatoes, wash and cut each tuber into 4-6 pieces.
Step 2
Peel the onion, chop finely. Pour boiling water over the tomatoes, peel and cut each into 4 pieces. Wash, peel and cut the eggplants. Finely chop the cilantro.
Step 3
Put in layers in a saucepan with a thick day: onion-meat-potatoes-eggplant. Pour over 2 glasses of water. Then add the tomatoes, season with salt, pepper, sprinkle with cilantro and simmer covered over low heat for about 2 hours. During this time, do not remove the lid, do not stir the food. Serve hot and garnish with herbs. For spicy lovers, add 3-4 chopped cloves of garlic or a pod of hot red pepper to the buglama.
