It is necessary

    • gutted duck weighing no more than 2 kg;
    • 3 sweet and sour apples;
    • salt
    • black pepper
    • chiseled coriander;
    • liquid honey - 2-3 tablespoons.

Instructions

Step 1

Wash and dry the chilled gutted duck with a towel. Carefully inspect the carcass for remaining feathers on the skin and remove any existing ones. If there is excess fat around the tail, cut it out or remove it from the inside. Rub the duck inside and out with a mixture of salt, black pepper and coriander.

Step 2

Set the oven temperature to 180-190⁰. Core the apples and cut them into large wedges. Stuff the duck with them. Stab the belly of the bird with wooden toothpicks or sew it up with thick cotton thread.

Step 3

Place the casserole and tie it on both sides. Put it on a baking sheet and place in an oven already preheated to the desired temperature. Duck is cooked in the sleeve for 1 hour 30 minutes.

Step 4

After an hour and a half, carefully remove the duck from the oven right with the tray and place it on a heat-resistant surface. Carefully tear off the sleeve and open it from the top so that the bottom of the sleeve remains intact and retains the juice from the roasting of the duck.

Scoop out 2 to 3 tablespoons of baked juice and mix with honey. Pour this mixture over the duck evenly. Place it back in the 220⁰ oven for 15 minutes to brown. Be careful not to burn the duck. When it's done, remove the threads or toothpicks from the bird's belly. Serve whole duck in a large, flat platter with herbs and stewed apples. Duck legs can be decorated with paper papillotes.
