Most often, pineapple is usually consumed in natural or canned form, as well as in combination with other fruits. But there are many recipes for delicious meat and vegetable salads, in which pineapple also takes part.
Pineapple salad "Richard"
The basis of this salad will be boiled chicken meat. It is gentle and non-greasy. Pineapple will add some piquancy to it. And the walnut will enrich with additional vitamins and microelements.
To prepare this salad, you must take the following components:
- 1 can of canned pineapples (sliced);
- 250 grams of chicken breast;
- 10 pieces of walnuts (kernels only);
- 1 bunch of parsley;
- 3 - 4 tablespoons of mayonnaise;
- 1 teaspoon freshly squeezed lemon juice;
- ground black pepper;
- finely ground coriander.
Finely chopped sprig of purple basil can add a spicy flavor to the salad.
You need to boil the chicken until cooked, cool and cut into cubes. Put a layer of meat in a salad bowl. Put a layer of crushed walnuts on it. Drizzle with sauce. Lay out the next layer from pineapple pieces.
Repeat all layers two to three times. Do not forget to pour the sauce. Thoroughly cover the last layer with the rest of the sauce and sprinkle with finely chopped parsley.
The preparation of the salad dressing is as follows. Mayonnaise should be mixed with squeezed lemon juice, black pepper and finely ground coriander to taste. A little salt can be added if necessary. This sauce will add a light tenderness and spicy taste to the salad.
Shrimp, Pineapple and Chinese Cabbage Salad
An unusual flavor combination sets this salad apart from others. Delicate shrimp meat, pomegranate astringency, sweet and sour pineapple taste and lightness of Chinese cabbage allow you to put this dish in a number of products to reduce excess weight without harm to health. The large composition of vitamins and nutrients gives the right to consider it a dietary product.
The following components must be involved in the preparation of the salad:
- 400 grams of shrimp;
- ½ part of a medium head of Chinese (Peking) cabbage;
- 1 can of canned pineapples (200 grams);
- 1 pomegranate fruit;
- 1 lemon or lime;
- 50 ml of olive oil.
If desired, you can use crab sticks instead of shrimp. They must be cut into small pieces of about 1 - 1, 5 cm.
Boil the shrimps in lightly salted water. Cool down. Put in a salad bowl. Peel the pomegranate and add the grains to the shrimp. Tear the leaves of Chinese cabbage into large pieces. Cut pineapple slices into small pieces. Combine and mix all ingredients.
Prepare the sauce for salad dressing. To do this, squeeze the juice from half a lemon or lime. Add olive oil to it. Shake everything well. You can add spices if desired. Pour the sauce over the salad dish. Decorate the top with any herbs and pomegranate seeds.
