Step 1

Prepare the turkey for cooking. To do this, take one large carcass weighing at least 2.5 kilograms, rinse it, let the water drain and dry it with a paper towel. Separate the last joints from the wings so that they do not burn when baking. Tuck the rest of the wings over the turkey's back. Make an incision in the belly of the bird and carefully slide the turkey legs into it.

Step 2

Prepare the filling. To do this, cut 4 green apples into quarters. Slightly sour, fragrant and very juicy varieties are best suited. Remove cores and seeds. And then, without removing the peel, cut into thin slices. Place the apples in a bowl and sprinkle with one teaspoon of chili flakes and the same amount of grated nutmeg.

Step 3

Sprinkle apples with 2 teaspoons of brown cane sugar. It has a pleasant molasses smell and an unusual taste. You can take simple sugar, but then it should be slightly less. Stir the apples very carefully so as not to damage. The spices and sugar should be evenly distributed over all the slices.

Step 4

Preheat oven to 160 degrees. Stuff the turkey carcass with the prepared apples and brush the skin on all sides with vegetable oil. Season poultry liberally with sea salt and transfer to a baking sheet. Bake for one hour, periodically pouring juice from a baking sheet over the turkey. Then increase the oven temperature to 180 degrees Celsius and bake for another half hour.

Step 5

Prepare the sauce. To do this, pour 300 grams of thawed cranberries with 100 grams of sugar, pour in 100 grams of water and put on high heat. While stirring, bring to a boil and immediately remove from heat. Add 100 grams of fresh mint leaves and pour in 100 grams of white vermouth. Stir very gently to avoid crushing the cranberries.

Step 6

Put the turkey on a large platter, garnish with all sides of lettuce and fruit, and cranberry sauce are served in a separate bowl.
