One of the most piquant and favorite sauces, adjika, is truly considered the queen of the kitchen when it comes to tasty and healthy. It is very nutritious, has a long shelf life, gives each dish an unforgettable taste and aroma.
It is necessary
- - 250 g of hot red pepper;
- - 100 g of sweet yellow pepper;
- - 2 kg of sweet red tomatoes;
- - 1 kg of bell pepper;
- - 200 g of fresh garlic;
- - 40 g of sugar;
- - 45 g of salt.
Instructions
Step 1
Rinse all vegetables in cold running water and let them dry. Peel the leaves from the tomatoes, if necessary. Cut the tomatoes into four pieces each.
Step 2
Peel the pepper, cut it in half and carefully remove all seeds. Peel and chop the garlic coarsely.
Step 3
In a large blender bowl, combine the tomatoes and peppers, then add some boiled water and garlic. Let it brew a little.
Step 4
Add salt and sugar, mix everything thoroughly. Put everything in a glass dish and place in a water bath. Bring to a boil. Stir the sauce constantly so that it does not thicken and stick to the bottom. In a water bath, the sauce should be kept for no more than 15-20 minutes.
Step 5
Remove and transfer to cold glassware. A bank is best. Leave the sauce on for a few days, it should ferment a little. Stir the sauce several times every day. For 3-4 days, the sauce can be eaten.
