There is probably no mushroom more versatile and international than champignon. Moreover, if in the traditions of Russian cuisine it is far from being given the first place, then in European cuisine it is the main component of many mushroom dishes.

- champignons - 1.5 kg;
- vegetable oil - 4 tablespoons;
- sour cream - 250 g;
- flour - 1 tablespoon;
- salt.
Instructions
Step 1
Prepare the mushrooms. If using fresh mushrooms, soak them in cold water for a few minutes to easily remove any existing dirt, then rinse under running water and lay on a towel. Let dry. Carefully separate the caps from the legs. Cut the hats into slices, chop the legs into circles. If you are using frozen mushrooms, no additional preparation is required. But when purchasing mushrooms for frying, buy mushrooms already cut into slices. Otherwise, you will have to spend time slicing them after cooking, because you cannot defrost mushrooms.
Step 2
Heat vegetable oil in a deep skillet and carefully place the mushrooms. These mushrooms contain a fairly large amount of water, and a frozen semi-finished product - even more, so for the first 15 minutes you will be engaged in banal water evaporation.
Step 3
Determine for yourself the degree of fried mushroom delicacy right away. Champignon is a grateful mushroom that can be eaten even raw, so it cooks quickly enough. If you like everything fried and crispy, then after the first 15 minutes of cooking, you will only need to salt the mushrooms to taste and serve them with potato croquettes and salad leaves. If you enjoy the delicate texture and softness, add the sauce to the lightly fried mushrooms.
Step 4
Add almost all the sour cream to the roasting mushrooms, leave only a couple of tablespoons. Add flour, half a glass of water to them and mix thoroughly. Then pour in a thin stream into the pan with the mushrooms and stir to avoid lumps. Sweat for another 5 minutes. Add salt and set aside.
Step 5
Serve with mashed potatoes, boiled green beans, or as a separate dish. The choice is yours!
