  • - ground black pepper;

  • - 2 tomatoes;
  • - 10 g of paprika;
  • - 3 cloves of garlic;
  • - 50 g of olive oil;
  • - salt, sugar;
  • - 20 g parsley (finely chopped).

Instructions

Step 1

Mix the sifted flour with baking powder and salt. Add wine and olive oil gradually. Knead the dough quickly and let it brew for an hour.

Step 2

Make butter for Koki (caramelized crispbread). Combine chopped garlic, parsley and paprika with olive oil. Let it brew for 30 minutes.

Step 3

For the filling of the pies, finely chop the onion and garlic and salve in olive oil until transparent. Add peppers and diced tomatoes. Simmer for 10 minutes. Then add the tuna and diced egg. Stir, add parsley. Remove from heat, cool.

Step 4

Roll out the finished soft and elastic dough into a layer 6-7 mm thick. Cut out the circles, brush them with olive oil. Place them on a parchment-lined baking sheet.

Step 5

Cut the tomatoes into slices at least 5 mm thick and cover the dough circles with them. Sprinkle with salt and sugar. Brush with cooked butter and bake in a preheated oven at 180 ° C for 30 minutes. After chilling a little, decorate the finished Koki as desired: anchovies, cheese, sausage, egg, tuna.

For fried pies, roll the dough into a layer, cut out circles 10-12 cm in diameter. Spoon the filling in the center, blind the edges and press down with a fork. Fry the pies in hot vegetable oil.
