If you want to celebrate Shrovetide on a grand scale, then according to the ancient Russian tradition, you can bake pancakes on yeast dough. The baking process of such products is not much different from ordinary pancakes. The main feature is that the yeast dough takes a little longer. But ready-made pastries will surely delight you - the pancakes are lush, very tender and taste excellent.
It is necessary
- - milk - 0.5 l;
- - premium flour - 280 g;
- - chicken egg - 1 pc.;
- - dry yeast - 1 tbsp. l.;
- - sugar - 1 tbsp. l.;
- - salt - 2/3 tsp;
- - soda - 2/3 tsp;
- - butter - 20 g;
- - frying pan.
Instructions
Step 1
To get started, heat 100 ml of milk in the microwave or in a ladle on the stove to keep it warm (but not hot) and pour it into a small cup. Add sugar, dry yeast and 2 level tablespoons of flour. Mix everything together so that there are no lumps left, and put in a warm place for 15 minutes.
Step 2
As soon as the dough is covered with foam, pour it into a deep bowl. Then add the egg, salt and 200 ml of milk, which should also be slightly warmed up.
Step 3
Now add in portions all the remaining flour and knead the dough so that there are no flour lumps left. After that, pour in 200 ml of milk that remains. Melt the butter in a water bath or microwave. Once it has cooled slightly, pour it into the dough and mix everything together well.
Step 4
Cover the finished dough with a lid or cling film and remove to a warm place. Once it doubles in size, stir it and leave to rise for another 1 hour.
Step 5
When the time is up, take a skillet and heat it up well. Now scoop up a ladle of dough and pour over the middle of the bottom of the pan. Grasp the handle and spread it evenly over the bottom. Clarification: the dough must be taken so that the thickness of the product is at least 2 mm. And one more important point: before you put the dough into a ladle, you do not need to stir it, so as not to destroy the splendor.
Step 6
Bake the pancakes on both sides until golden brown. Put the finished products in a pile on a plate next to you. They are best served hot. And also together with condensed milk, jam, sour cream or melted butter.
