Step 1

To make pancakes, you need not pancake flour, but general purpose wheat flour of the highest grade, with a protein content of 10-10, 3 g per 100 grams of flour.

Step 2

Pour flour into a bowl, add baking soda mixed with any citrus fruit juice. It can be lemon or orange juice. And do not be confused by the fact that soda fizzes more under the influence of sour lemon juice than when combined with sweet orange juice. The dough will still turn out good, and the pancakes will be thin, delicate. Naturally, the juice should be freshly squeezed, not from a bag.

Step 3

Now you need to add water to the flour. This should be done carefully, stirring with a whisk to prevent the formation of lumps. When this process is complete, add vegetable oil to the dough. This will make the pancake dough thick enough, the pancakes will turn out neat, and there will be no need to grease the pan.

Step 4

Heat the pan for pancakes, pour a small portion of the dough using a ladle, bake the pancakes, as usual, over medium heat. Let the pancake dry well on one side, then turn over and bake on the other side for a few seconds.
