Solyanka is a thick, rich soup, the main difference of which from other first courses is that it is prepared from a variety of smoked meats. Many people have heard about the hodgepodge, but not everyone cooked it at home. In fact, there is nothing difficult about it. Some housewives even have their own original recipes with the addition of their favorite ingredients. For starters, you can try to cook it in a very quick and easy way, which will not take much of your time.

- - uncooked smoked sausage - 200 g (you can replace Salami);
- - smoked brisket (bacon) - 200 g;
- - potatoes - 3 pcs.;
- - large onions - 1 pc.;
- - carrots - 1 pc.;
- - pickled (barrel) cucumbers - 200 g;
- - tomato paste - 2 tbsp. l.;
- - olives - 1 can;
- - pickle from olives or pickles;
- - Lemon - 1 pc.;
- - sunflower oil for frying;
- - bay leaves - 2-3 pcs.;
- - ground black pepper;
- - salt;
- - sugar - 1 tsp.
Instructions
Step 1
Peel potatoes, onions and carrots and rinse under running water. Chop the potatoes into small cubes, chop the onion into small pieces, and grate the carrots on a coarse grater.
Step 2
Also cut the smoked brisket, sausage and pickles into cubes similar in size to potato cubes. After that, take a saucepan, put chopped potatoes in it, pour in 2 liters of water and bring to a boil. Simmer the potatoes for about 20 minutes.

Meanwhile, pour 2-3 tablespoons of sunflower oil into a frying pan, heat it up, and then put the chopped onion and fry it until golden brown. Next, toss in the grated carrots and fry for another 3-4 minutes. Add brisket and sausage to vegetables. Mix everything and fry until golden brown.
Step 4
When the brisket sausage is cooked enough, add the tomato paste and a couple tablespoons of water. Add black pepper, sugar and salt to taste. Simmer for 5 minutes, then add pickles and cook for another 3-4 minutes.
Step 5
The frying is ready. Transfer it to a pot next to the potatoes, add the bay leaf, bring to a boil and cook at minimum temperature for 5-7 minutes. At the end, put the olives, pour in the pickle from them, or replace it with pickle brine. After that, remove the pot from the stove and let the soup steep for a while.
Step 6
Cut the lemon into circles. Pour the prepared hodgepodge into portions, put a couple of lemon slices in each of them and serve the dish with sour cream and fresh chopped herbs.
