Cheesecake is a fairly satisfying dessert with a delicate taste and a porous texture, which is obtained thanks to the combination of delicate German quark cheese and meringue. The cake should be baked at medium temperature to avoid cracking the dough. You can serve the pie with jam, which will allow you to fully appreciate the contrast of sweet and sour tastes.
It is necessary
- For the basics:
- - flour - 200 grams plus an additional amount for dusting the mold,
- - butter (softened) - 120 grams plus an additional amount for greasing the mold,
- - icing sugar - 50 grams,
- - one yolk,
- - a pinch of salt.
- For filling:
- - quark cheese - 500 grams,
- - eggs - 4 pcs,
- - sugar - 160 grams,
- - one lemon,
- - butter (softened) - 100 grams,
- - flour - 50 grams,
- - jam from strawberries, red currants or orange.
Instructions
Step 1
Sift the flour onto a clean slide-shaped table and make a depression in the center.
Place the softened butter (120 grams) in the recess.
We also add powdered sugar, yolk and a pinch of salt and start kneading the dough.
Step 2
Roll up a ball from the dough and wrap it in cling film. We put it in the freezer for one hour.
After an hour, roll out the dough with a rolling pin to a thickness of half a centimeter.
Step 3
Grease the mold with butter and sprinkle with flour. We spread the dough on the bottom of the mold and make punctures with a fork so that the dough does not swell.
We put the dish in the oven and bake for 10 minutes at 180 degrees. We do not bring it to full readiness, because a little later the dough will again need to be put in the oven.
Step 4
We rub 500 grams of quark cheese through a sieve so that there are no lumps. We transfer the cheese to a large cup.
For 4 eggs, separate the whites from the yolks and set the whites aside. Add the yolks and half the sugar (80 grams) to the quark cheese. We mix.
Step 5
My lemon and three zest on a fine grater. Add lemon zest to the cheese mass.
Add 100 grams of softened butter and 50 grams of sifted flour. Stir until smooth.
Step 6
Beat the whites with a mixer on medium speed.
When the protein mass increases in size, add the remaining sugar (80 grams) and continue to beat until a meringue consistency.
Gently add the meringue, stirring occasionally, to the cheese mass.
Step 7
When all the ingredients are combined, pour the cheese filling into the mold over the prepared base.
We bake in the oven for 45 minutes at a temperature of 150 degrees. Take the cake pan out of the oven and cool.
Cut into portions and serve with jam.
