If you decide to set a rich festive table and think over the menu, be sure to include potato salad with smoked eel in it. The salad will turn out to be delicious, it will replace any main dish, since it turns out to be not only tasty, but also satisfying.
It is necessary
- - 3 potatoes;
- - 150 g smoked eel;
- - 2 medium cucumbers;
- - fresh dill.
- For the sauce:
- - 50 ml of chicken broth;
- - 30 ml of olive oil;
- - 2 tbsp. tablespoons of champagne vinegar;
- - ground pepper, salt.
- For filing:
- - 100 g of rucolla;
- - 3 arrows of green onions.
Instructions
Step 1
Boil the potatoes, not cool completely, peel them. Cut, put in a bowl, add eel (peel, remove seeds, cut into slices) and cucumber cut into strips.
Step 2
In a separate container, mix the broth, oil, vinegar, salt and pepper. Instead of champagne vinegar, you can use wine white, apple. Whisk.
Step 3
Season the salad with the sauce, let it brew for half an hour.
Step 4
Place the rucolla on the plates, sprinkle the salad on top. Garnish with chopped green onions.
