Coffee cream is one of the most popular types of creams used by many pastry chefs to decorate cakes, pastries and other desserts. You can prepare such a cream at home, you just need to strictly adhere to the recipe for its preparation.

Coffee cream for butter cake

You will need:

- a glass of sugar;

- 100 ml of milk;

- one egg;

- 250 grams of oil;

- a tablespoon of ground coffee;

- 100 ml of water.

Put a spoonful of coffee in a cup and pour 100 ml of boiling water over it. Wait about 20 minutes, then strain the coffee through cheesecloth (it is best to use cheesecloth folded in several layers).

Pour the resulting strong coffee into a saucepan, add a glass of sugar and 100 ml of milk to it, bring the mixture to a boil.

Beat the egg and pour it into the coffee mass in a small stream, trying to mix everything thoroughly. Boil the mixture for about two minutes, then remove it from the heat and let it cool to room temperature.

Mash the butter (you must first keep it at room temperature for three to five hours) and mix it with the coffee mixture. Beat the cream with a mixer until smooth (its volume should approximately double).

Coffee cream for cream cake

You will need:

- 200 ml of strong coffee;

- three tablespoons of sugar;

- two yolks;

- two tablespoons of flour;

- a glass of 25-30% cream;

- 50 grams of butter.

Lightly brown a tablespoon of sugar in a frying pan (without oil), add coffee in it and boil the syrup (cooking time is about three to five minutes).

Beat the yolks with the remaining sugar (two tablespoons), add flour, mix everything with chilled cream.

Transfer the prepared mixture to a saucepan, add the coffee syrup and heat the cream until thickened. Remove cream from heat and refrigerate.

Add softened butter to the cooled cream and beat everything thoroughly with a mixer.
