Step 1
To prepare shortcrust pastry, sift flour into a deep bowl and mix it with salt. Cut 100 g of chilled butter into small pieces, spread over the surface of the flour, rub butter and flour with a wooden spoon or mixer. Continuing to grind, add water and one egg to the dough.
Step 2
The dough will initially be very tough and grainy, but slowly begin to transform into a smooth elastic mass. At some point, you will have to put aside the spoon and continue kneading with your hands. The finished dough must be wrapped in plastic wrap and sent to the refrigerator for a while.

The leeks should be peeled, cut lengthwise and rinsed well under running water to remove all dirt and sand. The coarse green part of the leek is of little use for food, it is better to cut it off and leave only the light part of it. Cut the onion into thin strips.

Cut the bacon into small cubes, fry in the remaining oil in a pan, add the leek and simmer for another 5 minutes.

Gruyere or other spicy cheese grate on a coarse grater. Turn on the oven at 180 ° C, and while it is heating, roll the dough into a thin cake, line it with a round shape with a diameter of 22 cm. Pick it in several places with a fork, put the leek on the dough, sprinkle it with grated cheese.

In a separate bowl, combine the eggs with the cream and beat them with a fork, add salt, pepper, and nutmeg. Pour the egg-cream mixture over the leek and bake in the oven for 25-30 minutes until the surface of the quiche turns brownish.
