It is necessary

  • Ingredients for 6 persons:
  • - olive oil;
  • - 2 cloves of garlic;
  • - medium onion;
  • - 300 g of basmati rice;
  • - 350 ml of chicken broth;
  • - 220 g of classic tomato sauce;
  • - 200 g of canned corn;
  • - 100 g of carrots (fresh or frozen);
  • - 100 g frozen green peas;
  • - a pinch of chili powder and cumin (about the tip of a knife);
  • - salt and black pepper to taste;
  • - 2 medium sized tomatoes;
  • - 2 tablespoons of chopped cilantro.

Instructions

Step 1

Squeeze the garlic, chop the onion, if the carrot is fresh, cut it into cubes. Cut the tomatoes into small pieces.

Step 2

Heat some olive oil in a skillet with a thick bottom. Fry garlic and onion over medium heat for 2-3 minutes. Add rice, stir and fry with garlic and onion for 2 minutes, so that the rice absorbs the aromas and is completely covered with oil.

Add tomato sauce to the pan and pour in the chicken broth, mix, bring to a boil. After 2 minutes, spread out the carrots, corn and green peas. Season with chili powder, cumin, salt and pepper.

Stir the rice with vegetables, bring to a boil, cover with a lid and simmer over low heat for 13-16 minutes until the rice is cooked.
