In many countries, rice is the staple food. It can replace bread and be an everyday food. Various ingredients and sauces are used to add flavor to the rice. The Mexican version of cooking rice involves the use of tomato sauce, with which the dish turns out to be very tender and tasty.
It is necessary
- Ingredients for 6 persons:
- - olive oil;
- - 2 cloves of garlic;
- - medium onion;
- - 300 g of basmati rice;
- - 350 ml of chicken broth;
- - 220 g of classic tomato sauce;
- - 200 g of canned corn;
- - 100 g of carrots (fresh or frozen);
- - 100 g frozen green peas;
- - a pinch of chili powder and cumin (about the tip of a knife);
- - salt and black pepper to taste;
- - 2 medium sized tomatoes;
- - 2 tablespoons of chopped cilantro.
Instructions
Step 1
Squeeze the garlic, chop the onion, if the carrot is fresh, cut it into cubes. Cut the tomatoes into small pieces.
Step 2
Heat some olive oil in a skillet with a thick bottom. Fry garlic and onion over medium heat for 2-3 minutes. Add rice, stir and fry with garlic and onion for 2 minutes, so that the rice absorbs the aromas and is completely covered with oil.
Step 3
Add tomato sauce to the pan and pour in the chicken broth, mix, bring to a boil. After 2 minutes, spread out the carrots, corn and green peas. Season with chili powder, cumin, salt and pepper.
Step 4
Stir the rice with vegetables, bring to a boil, cover with a lid and simmer over low heat for 13-16 minutes until the rice is cooked.
Step 5
Finally, add the tomatoes and cilantro, mix gently and immediately serve the dish.
