Chum salmon, a fish from the salmon family, is a real delicacy. Due to its low fat content, the product is dietary and can be eaten by all people without exception, even those who have problems with the gastrointestinal tract and gallbladder. Since chum salmon is not a cheap product, before you start cooking it, you should decide on a recipe. The most delicious fish is obtained in the form of a steak baked in the oven.
How to cook chum salmon in the oven juicy and soft
Since chum salmon is not particularly fatty fish and has only about six grams of fat per 100 grams of product, in order for the dish to turn out juicy, it should be cooked in special sauces. Both purchased and homemade based on sour cream, milk or cream are suitable. If there is no desire to add calories to the steaks, fatty sauces can be replaced with suitable marinades, for example, an excellent option is lemon juice with salt, pepper, and various herbs. But in this case, the fish will have to be baked in a bag or sleeve, if this is not done, the dish will turn out to be dry.
Chum steak in the oven in foil
Fish baked in foil in the oven retains its taste and is always juicy. And if you put vegetables and fruits containing acid on top of the fish, then the dish will turn out to be soft, it will have a slight sour taste. You can serve such a dish without a side dish, it will be replaced by the products with which the fish is prepared.
Ingredients:
- one medium-sized chum salmon (up to 30 cm);
- 2 tomatoes (soft and fleshy, watery not suitable);
- 5 grams of salt, pepper and your favorite dried aromatic herbs (you can use ready-made seasoning "for fish");
- 1 lemon or 2 limes;
- a small bunch of parsley and dill.
Recipe
Gut the chum, rinse it in cold water. Remove the ridge, cut the carcass into large pieces. Wash the lemon and tomatoes, cut into thin slices (you should not peel the peel from the lemon, it will give the dish a unique aroma when baked).
Place the foil over the dish in which you will bake the fish. Salt and pepper the steaks well, sprinkle with herbs and place in a baking sheet on foil. Place the tomato and lemon circles on top of the fish (the sequence does not matter).
Cover the baking sheet with a new sheet of foil and line the edges of the baking sheet with the edges of the foil on the bottom of the mold. Place the baking sheet in an oven heated to 200 degrees for 25-30 minutes. After the time has elapsed, turn off the kitchen appliance, but leave the dish with the dish for another 10 minutes in the oven. The delicacy can be served both hot and cold.
Chum salmon steak with potatoes in the oven
If you need to cook a homemade hearty meal, while spending as little time as possible on cooking, you can bake chum salmon in the oven with potatoes or other vegetables. Instead of potatoes, you can use zucchini, pumpkin, eggplant, or more.
Ingredients:
- chum salmon of medium size (30-40 cm);
- 5 potato tubers;
- three medium-sized onions;
- three tomatoes;
- 100 grams of hard cheese;
- vegetable oil;
- 3 tablespoons of mayonnaise;
- salt and pepper to taste.
Recipe
Rinse the chum salmon in cold water, pat dry with paper towels, then cut across the fibers into pieces of a suitable size. Peel the onions and potatoes, cut into cubes or strips. Rinse the tomatoes and cut into circles. Grate the cheese on a coarse grater.
Grease a baking sheet with vegetable oil, put prepared pieces of fish on its bottom, salt and pepper, sprinkle with 30-50 grams of cheese on top. Put the onions on the fish, then the potatoes, and last of all the tomatoes. Season the dish with plenty of salt, wrap the tin on top with foil and place in an oven preheated to 200 degrees for 40 minutes.
In a deep bowl, combine the mayonnaise with the remaining cheese. After 40 minutes, remove the dish from the oven, grease the dish on top with the prepared cheese-mayonnaise dressing and put it back in the oven for five minutes, but without covering the dish on top with foil (this is necessary for the cheese to melt on top and acquire a beautiful milky color). Before serving, the dish can be decorated with herbs, parsley, rosemary, cherry tomatoes cut in half are ideal.
Chum salmon steak with cream in the oven
The cream gives the fish a special juiciness. The dish is suitable for any side dish, which makes it especially popular among housewives. Diet food can not be called in any way, but occasionally you can pamper yourself with this delicacy.
Ingredients:
- chum salmon of medium size;
- 1 carrot;
- one onion head;
- ½ cup flour;
- half a glass of greasy nipples (the fatter the cream, the more tender the dish will turn out);
- salt and pepper.
Step-by-step cooking recipe
Peel and rinse vegetables. Cut the carrots into cubes and the onions into half rings. Rinse chum salmon, cut into portions, dry with paper towels.
Take a deep form, put the prepared ingredients in the following order: carrots, onions, and last of all - the fish (it should first be salted, left to lie down for a few minutes, and then rolled in flour).
Pour the cream into a cup, add a little salt and pepper, beat the mass with a mixer (no more than a couple of minutes, copious foam is unnecessary). Pour the cream into a pan with vegetables and fish.
Place a baking sheet with prepared foods in an oven heated to 200 degrees, leave for 30-35 minutes. It is better to serve the food hot.
Trick: the cream in the recipe can be replaced with sour cream. But so that the sour cream does not curl up during heat treatment, first it should be mixed with warm water 1 to 1 (this proportion is required, if you add less water, the mixture may stratify), and only then pour the fish and vegetables in the form with this composition. And yet, if there was no sour cream or cream available, you can pour the dish with just milk, only use not half a glass, as in the recipe, but 1/4.
Chum steak in the oven: a classic recipe
According to this recipe, chum salmon turns out to be excellent, the dish has an interesting taste, and most importantly, its calorie content does not exceed 180 kcal per 100 grams of product. The recipe will appeal to those who want to cook a delicious simple dinner, spending a minimum of food, effort and time on cooking.
Ingredients:
- small chum salmon;
- 40 ml lemon juice;
- 40 ml olive oil;
- salt and pepper;
- greens (you can use regular dill or parsley).
Recipe
Rinse the fish, cut into large pieces and dry. Combine lemon juice and oil, salt and pepper the marinade. Chop a bunch of greens (if the stalks of the herbs are hard, then be sure to remove them, do not add to the dish), mix the marinade and herbs in a wide bowl.
Put the fish in the prepared mixture and leave for 15 minutes, then turn the steaks over and leave again for a quarter of an hour (this is necessary for the marinade to completely saturate the fish, and since there is little composition, turning the steaks is a prerequisite in the recipe). After the time has elapsed, put the chum salmon on a baking sheet and place in the oven for 20-30 minutes (the optimal baking temperature is 180-200 degrees).
How long and at what temperature to bake chum salmon steaks in the oven
The baking time of fish depends on the temperature at which it is cooked, as well as the size and thickness of the pieces. You can bake the dish at a temperature of 170 to 200 degrees, and if you cook steaks no more than a centimeter thick, then 15-20 minutes is quite enough until they are completely baked. Steaks with a thickness of more than one centimeter require a longer heat treatment - from 30 minutes or more.
It is also worth noting that if the fish is cooked, for example, with potatoes, then the readiness of the dish should be determined by the readiness of the vegetables. The fact is that almost all vegetables take longer to bake than fish. This should be taken into account when creating your culinary masterpiece.
