Ingredients:

- sifted flour - 70-80 g;
- fine salt - 1 small the spoon;
- a mixture of spices for fish (with curry and marjoram) - to taste;

- garlic - 10-15 g;
- chili pepper - 5 g;
- corn flour - 2 large spoons;
- tomatoes - 1 large;
- peeled champignons - 70-100 g;
- soy sauce - 1 large spoon;
- onions - 1 head;
- raw eggs - 1 pc.;
- cheese - 50-60 g;
- classic mayonnaise - 2 large spoons;
- rosemary and thyme - 2 sprigs each;
- salt, oil and spices for fish - to taste.
Preparation:
Mix the cornmeal with salt and spices. Dip the steaks in the resulting composition.
Pour vegetable oil into a frying pan. Send small pieces of garlic and chili into it. Boil the oil, then fry the steaks in fat until lightly browned. It is not necessary to bring them to readiness.
Spread the heat-resistant form with the same fragrant oil. Place fish steaks in it. Cover them with tomato slices.
Chop mushrooms and onions finely. Fry them until tender and appetizing golden brown in the remaining oil. Pour soy sauce at the very end. Spread this mass over the fish and tomatoes.
Beat a raw egg in a separate deep bowl. Mix it with mayonnaise and grated cheese. Pour the ingredients in a heat-resistant form with the composition.
Cook the treat in the oven at 180-190 degrees. The baking time is 20-25 minutes. Decorate the resulting dish with fresh herbs.
Pink salmon steaks in a slow cooker
Ingredients:
- pink salmon - a whole carcass;
- cheese (hard / semi-hard) - 130-150 g;
- medium fat cream - 1 full glass;
- sour cream - 1/3 tbsp.;
- onion - 1 head;
- salt, spices, lime / lemon juice, fresh herbs and oil to taste.
Preparation:
Defrost, peel thoroughly and wash the fish carcass. Cut the rest into steaks. The width of each should be about 3 cm. Grate the prepared fish with a mixture of salt and seasonings, pour over with citrus juice.
Fry finely chopped onions in a small amount of any oil. It is best to use a mixture of vegetable and cream. For this stage, several modes of "kitchen assistant" are suitable at once. For example: "Frying" and "Baking".
Mix all dairy products and chopped fresh herbs separately. Salt the resulting sauce.
Place fish steaks in the bowl of the device. Spread the onion frying on top. Pour creamy sauce over everything.
Cooking a treat in a slow cooker under a closed lid for 50 minutes. The optimal mode is "Extinguishing". As soon as the program ends, you need to fill the steaks with chopped cheese and leave the device in the heating mode for another 10-12 minutes.
The result is the most delicate fish dish. The steaks are soaked in a creamy sauce and saturated with the aroma of spices, fresh herbs.
Fish steaks with oranges
Ingredients:
- pink salmon - 2 standard steaks;
- ripe oranges - 2 large;
- granulated sugar - 80-100 g;
- salt to taste
- medium fat sour cream - 1/3 tbsp.;
- horseradish (sauce) - 2 small spoons;
- fresh dill - ¼ bunch.
Preparation:
Using the finest grater, remove the zest from the two citrus fruits. If you don't have time for this process, you can simply use 1 large spoonful of already dried orange zest. Squeeze juice from the remaining parts. Strain it from the seeds.
Mix the zest with sugar and salt. The latter should be taken about 20 g. Grate the fish steaks with the resulting mixture. Cover them with foil and put in a cool place for an hour.
Remove the marinated steaks, rinse with cool water and dry thoroughly. Fry them in a grill skillet, sprinkle with oil beforehand. It will be enough for 2.5-3 minutes on each side. If thin pieces of the steak begin to fall apart in the process, chop them off with toothpicks. At this time, turn on the oven to heat up to 200-210 degrees.
Transfer the sautéed fish to a large ovenproof dish. Drizzle over the remaining fat in the pan. Bake pink salmon at the above temperature for 10-12 minutes.
For the sauce, combine chopped dill with sour cream, orange juice, horseradish and salt. Mix everything well. Pour the sauce over the fish in the oven. Continue cooking for another 6-7 minutes.
The resulting treat is delicious to serve with a side dish of boiled rice. Fresh vegetables can be used to complement it.
Under ginger marinade
Ingredients:
- pink salmon steaks - 7-8 pcs.;
- olive oil - 1/3 tbsp.;
- lime / lemon juice - 2 tbsp. l.;
- a mixture of dried thyme and dark basil - 1 small. the spoon;
- freshly grated ginger - 2 tbsp. l.;
- garlic - 4-6 cloves;
- soy sauce - 1 tbsp l.;
- dry white wine - 1/3 tbsp.;
- butter - 2 tbsp. l.;
- sweet or spicy mustard - 1 tbsp. l.
Preparation:
Combine olive oil and citrus juice. Add dry spices.
Spread the prepared (washed and dried) fish steaks with the resulting composition. Leave the pink salmon in this form right on the table for at least 90 minutes.
Fry the pickled steaks in a grill pan for 5-6 minutes on each side. They should be covered with a light golden brown crust.
In a large, convenient bowl, combine soft butter, equal amount of olive oil (2 tablespoons), mustard, and soy sauce. Pour everything over with white wine. Add crushed garlic and finely grated peeled ginger to the sauce. Transfer the mass to a saucepan and bring to a boil.
Put the finished steaks on a large plate. Pour them with interesting ginger sauce and serve immediately for dinner.
Pink salmon steaks in Greek
Ingredients:
- pink salmon steaks - 2 pcs.;
- medium-sized lemon - half;
- red onion - a whole head;
- fresh thyme - 5-6 branches;
- dry Greek herbs and dried basil - a large pinch;
- fish paste-seasoning - 15-20 g;
- small balls of mozzarella - for serving;
- salt, paprika, oil - to taste.
Preparation:
Spread over an ovenproof baking dish with a silicone brush. Place fish steaks in it. If you wish, you can also place a side dish next to it. For example, sticks of potatoes, pumpkin, squash and / or carrots.
Sprinkle the pieces of pink salmon with a mixture of Greek herbs, salt and basil. Lay thin lemon wedges and thyme sprigs on top. Bake the treat in the oven at 170-180 degrees for 7-8 minutes.
Send miniature red onion cubes to a small frying pan. Drizzle a little with any oil and fry. When the vegetable is already browned, send ready-made seasoning paste for fish to it.
If the latter could not be found on sale in the store, you can cook it yourself. To do this, mix water and vegetable oil in equal proportions, add spices from a coffee grinder - curry, dry garlic, sesame seeds, dry ginger and black pepper (pinch each). Mix everything well and leave in a glass container in the cold for storage.
Transfer the prepared steaks to a skillet and heat them for a couple of minutes. Serve hot, garnish with mozzarella balls and garnish with vegetables.
Steak marinated in soy sauce
Ingredients:
- pink salmon steak - 1 pc.;
- soy sauce (thick, classic) - 30 ml.;
- coarse sea salt, freshly ground pepper and oil - to taste;
- cherry - 5-6 pcs.;
- lettuce leaves - 2 pcs.
Preparation:
Grate the washed and dried steak with a mixture of coarse sea salt and pepper. Drizzle with soy sauce. You need to be careful with the salt. After all, soy sauce is already very salty. Leave the steak like this for about half an hour.
Cut the cherry into halves. Put them in a skillet with boiling oil in places of the cuts down. Fry the tomatoes for about one minute. They should soften. You can also add any of your favorite spices to tomatoes. The resulting soft tomatoes will be a side dish for the fish.
Send the steak to the frying pan where the cherry was fried. Pepper again and fry until a crust appears. On each side, you need to cook pink salmon for about 1.5-2 minutes. It is very important not to overdry the steak, otherwise it will become "rubbery".
Put the finished treat on lettuce leaves along with a tomato garnish. Serve warm. This simple recipe allows you to prepare a successful, almost restaurant-like dish.
With green sauce
Ingredients:
- salmon steaks - 2 pcs.;
- avocado - 1 pc.;
- physalis fruits - 4 pcs.;
- lime - 2 pcs.;
- jalapeno - 1 pc.;
- garlic - 1 slice;
- refined oil - 2 tbsp. l.;
- fresh cilantro - 2 sprigs;
- salt and spices to taste.
Preparation:
Squeeze the juice out of the limes and strain it from the seeds. Remove pits and peels from the avocado. Send the rest to a blender bowl along with cilantro, 3 tbsp. l. lime juice, jalapeno pieces, peeled physalis and garlic. Kill everything to a state of a homogeneous gruel.
Preheat the oven to 180-190 degrees. Place the steaks in an ovenproof dish covered with parchment. Drizzle them with oil combined with 1 tbsp. l. lime juice. Bake the fish for 20-25 minutes.
Put the finished steaks on a plate. Serve with green sauce.
Steamed dish with coriander
Ingredients:
- pink salmon - 400-450 g;
- coriander - 5 dessert spoons;
- salt and pepper - a large pinch;
- olive oil - 4 tbsp. l.;
- lemon - half.
Preparation:
Cut the fish, rinse. Cut into steaks. It should be free of viscera and even small fins.
Send coriander seeds to a skillet without oil. Dry them, stirring occasionally, for a couple of minutes. Mix the aromatic seeds with salt and pepper. Grate the fish thoroughly with the resulting mass and leave it in this form for about half an hour.
Squeeze juice from half of citrus. Select all the bones from it. Combine fresh with butter. Pour the liquid mixture over each steak. Place them in a special steamer bowl. Cook fish pieces directly in the marinade for about half an hour.
You can replace the steamer and multicooker. In this case, the fish is placed in a special "basket" with small holes. Steam mode is activated for about 40-50 minutes.
